  • 4 oz (115 g) cream cheese, softened
  • 3 tablespoons unsalted butter, softened
  • ½ cup (50 g) powdered erythritol
  • 1 teaspoon vanilla extract
  • 2–3 tablespoons heavy cream (as needed)

Instructions

Step 1: Prepare the Dough

  1. Preheat oven to 375°F (190°C).
  2. In a bowl, mix together:
    • Almond flour
    • Coconut flour
    • Baking powder
    • Sweetener
    • Salt
  3. In a microwave-safe bowl, combine mozzarella cheese and cream cheese.

  1. Carefully roll the dough tightly from the long side into a log.
  2. Use a sharp knife to cut into 10 equal rolls.
  3. Place rolls into a greased baking dish.

Step 5: Bake

  1. Bake for 20–25 minutes until golden and cooked through.
  2. Remove from the oven and allow to cool for 10 minutes.

Step 6: Make the Frosting

  1. Beat cream cheese and butter until smooth.
  2. Add powdered sweetener and vanilla extract.
  3. Slowly add heavy cream until the frosting reaches a creamy consistency.

Step 7: Frost and Serve

  1. Spread cream cheese frosting over warm cinnamon rolls.
  2. Serve immediately for the softest texture.
