Optional Additions

  • Fresh basil leaves
  • Hot sauce
  • Sliced turkey or chicken
  • Everything bagel seasoning

Equipment Needed

  • Nonstick skillet or egg ring molds
  • Mixing bowl
  • Whisk
  • Baking sheet (optional)
  • Spatula

Instructions

Step 1: Prepare the Egg Mixture

In a medium bowl, whisk together:

  • Eggs
  • Heavy cream
  • Salt
  • Black pepper
  • Garlic powder
  • Chives or parsley

Whisk until smooth and well combined.

If using shredded cheese, stir it into the mixture.

Step 2: Cook the Egglets

Skillet Method

Heat a nonstick skillet over medium-low heat.

Lightly grease the pan with butter.

Pour about ¼ cup of egg mixture into the pan to create a small round egg patty.

Cook for 2–3 minutes until the bottom is set.

Flip carefully and cook another 1–2 minutes until fully cooked.

Repeat until all egg mixture is used.

You should have about 8 egg rounds.

Oven Method

Preheat oven to 350°F (175°C).

Grease a muffin-top pan or small round molds.

Pour in the egg mixture.

Bake for 12–15 minutes until set.

Allow to cool slightly before removing.

Step 3: Make the Sauce

In a small bowl, combine:

  • Mayonnaise
  • Dijon mustard
  • Lemon juice
  • Garlic powder
  • Black pepper

Mix until creamy and smooth.

Step 4: Assemble the BLT Egglets

Place one egg round on a plate.

Spread a small amount of the creamy sauce over the top.

Layer with:

  • Lettuce
  • Tomato slice
  • Crispy bacon

Add optional toppings like avocado or cheese.

Place another egg round on top to create a sandwich.

Repeat with remaining ingredients.

Step 5: Serve

Serve immediately while the bacon is crispy and the egglets are fresh.

For easier eating, wrap each egglet in parchment paper or lettuce leaves.

Serving Suggestions

BLT Egglets pair well with:

  • Fresh fruit (for non-keto diets)
  • Avocado salad
  • Cauliflower hash browns
  • Greek yogurt
  • Roasted vegetables
  • Keto smoothies
  • Fresh cucumber salad

Storage

  • Store cooked egglets separately from fillings for the best texture.
  • Refrigerate egg rounds in an airtight container for up to 4 days.
  • Store cooked bacon separately and assemble before eating.

Reheating

Egg Rounds:
Warm in a skillet over low heat for 1–2 minutes or microwave briefly.

Bacon:
Reheat in an air fryer or skillet to restore crispiness.

Avoid reheating assembled BLT Egglets because the lettuce and tomato may become soft.

Tips for Success

  • Cook egglets over medium-low heat to keep them soft and tender.
  • Use crispy bacon for the best texture contrast.
  • Pat tomato slices dry before assembling to prevent soggy egglets.
  • Prepare egg rounds ahead of time for quick breakfasts throughout the week.
  • Add avocado for extra creaminess and healthy fats.
  • For a stronger BLT flavor, mix a little ranch seasoning into the mayonnaise sauce.
