For the Creamy Keto Dressing

  • ¾ cup (180 g) mayonnaise
  • 2 tablespoons sour cream
  • 1 tablespoon Dijon mustard
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon powdered erythritol or monk fruit sweetener (optional)
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ¼ teaspoon smoked paprika
  • Salt and black pepper, to taste

Equipment

  • Large mixing bowl
  • Small mixing bowl
  • Whisk
  • Cutting board
  • Sharp knife
  • Measuring cups and spoons

Instructions

Step 1: Prepare the Broccoli

  1. Wash the broccoli thoroughly and pat it dry.
  2. Cut into small, bite-sized florets.
  3. For a slightly softer texture, blanch the broccoli in boiling water for 30 seconds, then transfer it immediately to ice water. Drain well and dry completely.

Step 2: Cook the Bacon

  1. Cook the bacon in a skillet over medium heat until crisp.
  2. Transfer to a paper towel-lined plate to drain.
  3. Once cooled, crumble into small pieces.

Step 3: Make the Dressing

In a small bowl, whisk together:

  • Mayonnaise
  • Sour cream
  • Dijon mustard
  • Apple cider vinegar
  • Lemon juice
  • Sweetener (if using)
  • Garlic powder
  • Onion powder
  • Smoked paprika
  • Salt and black pepper

Whisk until smooth and creamy.

Step 4: Assemble the Salad

In a large bowl, combine:

  • Broccoli florets
  • Crumbled bacon
  • Shredded cheddar cheese
  • Red onion
  • Sunflower seeds
  • Pecans or walnuts (if using)
  • Chopped parsley

Pour the dressing over the salad and toss until everything is evenly coated.

Step 5: Chill

Cover and refrigerate for at least 30 minutes before serving. This allows the dressing to coat the broccoli well and enhances the flavor.

Step 6: Serve

Stir gently before serving and garnish with extra bacon, shredded cheddar, parsley, or sunflower seeds if desired.

Flavor Variations

Avocado Keto Broccoli Salad

Mediterranean Style

Add sliced olives, crumbled feta cheese, and chopped cucumber for a Mediterranean twist.

Storage

  • Refrigerator: Store in an airtight container for up to 3 days.
