Instructions

Step 1: Prepare the Chicken

Pat the chicken dry with paper towels.

Season lightly with salt and pepper.

You can use raw chicken directly in the chili, or for extra flavor, sear it first.

To sear:

Heat 1 tablespoon olive oil in a large pot over medium-high heat.

Cook chicken for 3–4 minutes per side until lightly golden.

Remove and set aside.

Step 2: Sauté the Vegetables

Heat olive oil in a large pot over medium heat.

Add diced onion and cook for 4–5 minutes until softened.

Add:

  • Red bell pepper
  • Poblano pepper (if using)

Cook for another 3 minutes.

Stir in minced garlic and cook for 30 seconds until fragrant.

Step 3: Build the Chili Base

Add:

  • Chicken broth
  • Salsa verde
  • White beans
  • Corn
  • Green chilies

Stir well.

Add all seasonings:

  • Cumin
  • Chili powder
  • Smoked paprika
  • Oregano
  • Coriander
  • Onion powder
  • Garlic powder
  • Salt
  • Black pepper
  • Cayenne (if using)

Mix until combined.

Step 4: Cook the Chicken

Return the chicken to the pot.

Bring the chili to a gentle boil.

Reduce heat to low.

Cover and simmer for:

25–30 minutes

until the chicken is tender and fully cooked.

The chicken should reach an internal temperature of 165°F (74°C).

Step 5: Shred the Chicken

Remove the chicken from the pot.

Use two forks to shred it into bite-sized pieces.

Return the shredded chicken to the chili.

Stir well.

Step 6: Make It Creamy

Reduce the heat to low.

Add softened cream cheese and stir until completely melted.

Add:

  • Sour cream
  • Heavy cream (if using)
  • Monterey Jack cheese

Stir gently until the chili becomes creamy and smooth.

Avoid boiling after adding dairy to prevent separation.

Step 7: Finish the Chili

Add fresh lime juice and stir.

Taste and adjust seasoning.

Add more:

  • Salt for richness
  • Lime juice for brightness
  • Chili powder for spice
  • Green chilies for heat

Let the chili rest for 5–10 minutes before serving.

Step 8: Serve

Ladle the chili into bowls.

Top with your favorite garnishes:

  • Cheese
  • Cilantro
  • Avocado
  • Sour cream
  • Tortilla strips
  • Jalapeños
  • Green onions

Serve warm.
