Ingredients

Instructions

Step 1: Prepare the Corn

Remove the husks and silk from the corn.

Rinse and dry the corn thoroughly.

Step 4: Prepare the Vegetables

Add the following to the grilled corn:

  • Cherry tomatoes
  • Red bell pepper
  • Poblano pepper
  • Jalapeño
  • Red onion
  • Garlic
  • Cilantro
  • Parsley

Gently toss to combine.


Step 5: Make the Dressing

In a small bowl, whisk together:

  • Lime juice
  • Lemon juice
  • Olive oil
  • Honey
  • Cumin
  • Chili powder
  • Smoked paprika
  • Salt
  • Black pepper
  • Red pepper flakes

Whisk until smooth and well combined.


Step 6: Combine the Salsa

Pour the dressing over the corn mixture.

Toss gently until all ingredients are evenly coated.

Add the diced avocado and carefully fold it in to prevent it from breaking apart.

If using cotija cheese or feta, sprinkle it over the salsa and gently mix.


Step 7: Rest and Serve

Cover and refrigerate for 30 minutes before serving.

This allows the flavors to blend together.

Before serving, taste and adjust seasoning with additional lime juice, salt, or chili if needed.

Transfer to a serving bowl and garnish with fresh herbs and lime wedges.
