Instructions
Step 1: Clean the Clams
Place the clams in a large bowl filled with cold water.
Add about 2 tablespoons of salt and allow them to soak for 20 minutes. This helps remove sand and grit.
Lift the clams out of the water instead of pouring them out, leaving any sand behind.
Rinse thoroughly under cold running water.
Discard any clams with:
- Cracked shells
- Broken shells
- Shells that remain open after gently tapping them
Step 2: Cook the Bacon
Heat a large Dutch oven or deep skillet over medium heat.
Add the chopped bacon and cook for 5–7 minutes, stirring occasionally, until the bacon becomes crispy and releases its fat.
Transfer the cooked bacon to a plate lined with paper towels.
Leave about 2 tablespoons of bacon fat in the pan for flavor.
Step 3: Sauté the Aromatics
Add olive oil and butter to the bacon fat.
Add the diced shallot and cook for 2–3 minutes until softened.
Stir in the garlic and cook for 30 seconds until fragrant.
Be careful not to burn the garlic.
Step 4: Cook the Corn Mixture
Add the sweet corn kernels to the pan.
Cook for 4–5 minutes, stirring occasionally, until the corn becomes slightly golden and caramelized.
Add:
- Smoked paprika
- Red pepper flakes
- Black pepper
Stir to coat the corn with the seasonings.
Step 5: Add the Liquid
Pour in:
- White wine (or seafood broth)
- Chicken broth (or clam juice)
Add the cherry tomatoes if using.
Bring the mixture to a gentle simmer.
Cook for 3–4 minutes to allow the flavors to combine.
Step 6: Steam the Clams
Add the cleaned clams to the pot.
Cover tightly with a lid.
Steam for 6–10 minutes, shaking the pot occasionally, until the clams open.
Discard any clams that do not open after cooking.
The broth will become rich and flavorful from the clam juices.
Step 7: Finish the Broth
Remove the lid.
Add:
- Cooked bacon
- Lemon juice
- Cold butter
Stir gently until the butter melts into the broth.
Taste and adjust seasoning.
Add salt only if needed, as clams and bacon naturally add saltiness.
Step 8: Add Fresh Herbs
Remove the pot from heat.
Fold in:
- Fresh basil
- Fresh parsley
The herbs should remain bright and fresh.
Step 9: Serve
Divide the clams and broth into serving bowls.
Drizzle with extra virgin olive oil.
Serve immediately with warm crusty bread for dipping into the flavorful broth.
