Equipment

  • Food processor (optional)
  • Large mixing bowls
  • Electric mixer
  • Rubber spatula
  • Offset spatula

Instructions

Step 1: Prepare the Granola Crust

Place the granola in a food processor and pulse a few times until it resembles coarse crumbs. Leave some larger pieces for added texture.

Transfer the granola to a mixing bowl and stir in:

  • Melted butter
  • Honey
  • Vanilla extract
  • Ground cinnamon
  • Salt

Mix until the granola is evenly coated and resembles damp sand.

Step 2: Form the Crust

Press the granola mixture firmly into the bottom and up the sides of a 9-inch tart pan.

Use the bottom of a measuring cup or a glass to compact the crust evenly.

Place the tart pan in the refrigerator for 30 minutes to firm up.

Step 3: Prepare the Filling

In a large mixing bowl, beat the softened cream cheese until smooth.

Add:

  • Greek yogurt
  • Powdered sugar
  • Honey
  • Vanilla extract
  • Lemon zest
  • Lemon juice

Beat until creamy and well combined.

Step 4: Whip the Cream

In a separate chilled bowl, whip the cold heavy cream until stiff peaks form.

Gently fold the whipped cream into the cream cheese mixture using a spatula until light, fluffy, and fully incorporated.

Avoid overmixing to maintain an airy texture.

Step 5: Assemble the Tart

Remove the chilled crust from the refrigerator.

Spread the creamy filling evenly over the crust using an offset spatula.

Smooth the top into an even layer.

Step 6: Arrange the Fruit

Decorate the tart with the fresh fruit, arranging it in concentric circles or any decorative pattern you like.

Scatter the blueberries, raspberries, blackberries, mandarin oranges, and pomegranate seeds between the strawberry and kiwi slices for a vibrant presentation.

Step 7: Chill

Cover the tart loosely and refrigerate for at least 4 hours, or until the filling is fully set.

For the best texture and flavor, chill overnight.

Step 8: Garnish and Serve

Just before serving, drizzle lightly with honey.

Sprinkle with:

  • Fresh lemon zest
  • Toasted sliced almonds or chopped pistachios (optional)

Garnish with fresh mint leaves.

Slice with a sharp knife and serve chilled.

Chef’s Tips

  • Use a granola with oats and nuts for the best texture and flavor.
  • Pat juicy fruits dry with paper towels before arranging them to prevent excess moisture.
  • Chill the tart thoroughly before slicing for clean, neat servings.
  • Use seasonal fruit for the freshest taste and most colorful presentation.
  • For extra shine, lightly brush the fruit with warmed apricot jam or honey.
