  • Large mixing bowl
  • Medium mixing bowl
  • Whisk
  • Rubber spatula
  • Fork or potato masher
  • Ice cream scoop or large spoon
  • Measuring cups and spoons
  • Cooling rack

Instructions

Step 1: Prepare the Oven

Preheat the oven to 350°F (175°C).

Line a 12-cup muffin pan with paper liners or lightly grease each muffin cup.

Step 2: Mix the Dry Ingredients

In a large bowl, whisk together:

  • Wheat bran
  • Whole wheat flour
  • All-purpose flour
  • Baking powder
  • Baking soda
  • Ground cinnamon
  • Ground nutmeg (if using)
  • Salt

Mix until evenly combined.

Step 3: Prepare the Wet Ingredients

In a separate bowl, mash the bananas until smooth.

Add:

  • Eggs
  • Honey
  • Melted coconut oil
  • Greek yogurt
  • Milk
  • Vanilla extract

Whisk until smooth and well combined.

Step 4: Make the Batter

Pour the wet ingredients into the dry ingredients.

Stir gently until just combined.

Do not overmix.

Fold in any optional mix-ins such as walnuts, raisins, chocolate chips, coconut, flaxseed, or chia seeds.

Let the batter rest for 5 minutes so the wheat bran can absorb some of the moisture.

Step 5: Fill the Muffin Pan

Divide the batter evenly among the prepared muffin cups, filling each about ¾ full.

Top with sliced banana, chopped walnuts, rolled oats, or a light drizzle of honey if desired.

Step 6: Bake

Bake for 20–25 minutes, or until the tops are golden brown and a toothpick inserted into the center comes out clean or with a few moist crumbs.

Avoid overbaking to keep the muffins moist.

Step 7: Cool

Allow the muffins to cool in the pan for 5 minutes.

Transfer them to a wire rack to cool completely.

Step 8: Serve

Serve warm or at room temperature.

Enjoy plain or spread with butter, almond butter, peanut butter, or a drizzle of honey.
