Instructions
Step 1: Prepare the Oven
Preheat the oven to 350°F (175°C).
Grease a 9×5-inch loaf pan and line it with parchment paper, leaving an overhang on the sides for easy removal.
Step 2: Mix the Dry Ingredients
In a large bowl, whisk together:
- Whole wheat pastry flour
- All-purpose flour
- Baking powder
- Baking soda
- Salt
- Poppy seeds
Mix until evenly combined.
Step 3: Prepare the Wet Ingredients
In a separate bowl, whisk together:
- Eggs
- Greek yogurt
- Maple syrup or honey
- Avocado oil
- Lemon juice
- Lemon zest
- Vanilla extract
- Milk
Whisk until smooth and well combined.
Step 4: Make the Batter
Pour the wet ingredients into the dry ingredients.
Stir gently with a rubber spatula until just combined.
Do not overmix, as this can make the bread dense.
Step 5: Fill the Loaf Pan
Transfer the batter to the prepared loaf pan.
Smooth the top with a spatula.
Sprinkle with extra poppy seeds or thin lemon slices, if desired.
Step 6: Bake
Bake for 50–55 minutes, or until the top is lightly golden and a toothpick inserted into the center comes out clean or with a few moist crumbs.
If the loaf begins to brown too quickly, loosely tent it with aluminum foil during the final 10–15 minutes of baking.
Step 7: Cool
Allow the bread to cool in the pan for 10 minutes.
Carefully lift it out using the parchment paper and transfer it to a wire rack to cool completely.
Step 8: Make the Lemon Glaze (Optional)
In a small bowl, whisk together:
- Powdered sugar
- Fresh lemon juice
- Lemon zest
Mix until smooth.
Drizzle the glaze over the cooled bread.
Step 9: Slice and Serve
Slice the bread and serve at room temperature or slightly warm.
Enjoy on its own or with butter, cream cheese, or Greek yogurt.
