Instructions
Step 1: Prepare the Oven
Preheat the oven to 350°F (175°C).
Grease a 9×5-inch loaf pan and line it with parchment paper, leaving an overhang for easy removal.
Step 2: Mix the Dry Ingredients
In a large bowl, whisk together:
- Whole wheat pastry flour
- All-purpose flour
- Baking powder
- Baking soda
- Salt
- Cinnamon
- Ground ginger
- Nutmeg
- Ground cloves (if using)
Mix until evenly combined.
Step 3: Prepare the Wet Ingredients
In a separate bowl, mash the bananas until smooth.
Add:
- Grated carrots
- Eggs
- Greek yogurt
- Maple syrup or honey
- Avocado oil
- Vanilla extract
Whisk until well combined.
Step 4: Make the Batter
Pour the wet ingredients into the dry ingredients.
Fold gently with a rubber spatula until just combined.
Do not overmix.
Fold in any optional mix-ins such as walnuts, raisins, coconut, flaxseed, chia seeds, or pineapple.
Step 5: Fill the Loaf Pan
Transfer the batter to the prepared loaf pan.
Smooth the top evenly with a spatula.
Sprinkle chopped walnuts or shredded coconut over the top if desired.
Step 6: Bake
Bake for 55–65 minutes, or until the loaf is golden brown and a toothpick inserted into the center comes out clean or with a few moist crumbs.
If the top browns too quickly, loosely cover it with aluminum foil during the final 15 minutes of baking.
Step 7: Cool
Allow the bread to cool in the pan for 10–15 minutes.
Lift it out using the parchment paper and place it on a wire rack to cool completely before frosting.

In a medium bowl, combine:
- Softened cream cheese
- Greek yogurt

Once the banana bread has cooled completely, spread the cinnamon cream cheese frosting evenly over the top.
Decorate with chopped walnuts, carrot ribbons, shredded coconut, or a light dusting of cinnamon if desired.
Step 10: Slice and Serve
Slice into thick pieces and serve at room temperature.
Enjoy as a wholesome breakfast, afternoon snack, or light dessert.
