Ingredients
For the Donuts
- 1½ cups (190 g) all-purpose flour
- 1 tsp baking powder
- ½ tsp baking soda
- ½ tsp ground cinnamon
- ¼ tsp salt
- ⅓ cup (70 g) brown sugar
- 2 ripe bananas, mashed (about 1 cup)
- 1 large egg
- ¼ cup (60 ml) milk
- ¼ cup (60 ml) melted butter or vegetable oil
- 1 tsp vanilla extract
Optional Vanilla Glaze
- 1 cup (120 g) powdered sugar
- 2–3 tbsp milk
- ½ tsp vanilla extract
Instructions
1. Prepare the Oven
- Preheat the oven to 350°F (175°C).
- Lightly grease a donut pan.
2. Mix the Dry Ingredients
- In a medium bowl, whisk together the flour, baking powder, baking soda, cinnamon, and salt.
3. Mix the Wet Ingredients
- In a separate bowl, combine the mashed bananas, brown sugar, egg, milk, melted butter, and vanilla extract.
- Stir until smooth.
4. Make the Batter
- Add the dry ingredients to the wet ingredients.
- Mix just until combined. Avoid overmixing.
5. Fill the Donut Pan
- Spoon or pipe the batter into the prepared donut pan, filling each cavity about ¾ full.
6. Bake
- Bake for 10–12 minutes, or until a toothpick inserted into a donut comes out clean.
- Let cool in the pan for 5 minutes, then transfer to a wire rack.
7. Glaze (Optional)
- Whisk together powdered sugar, milk, and vanilla until smooth.
- Dip the cooled donuts into the glaze and let it set before serving.
Tips
- Use very ripe bananas with brown spots for the best flavor and sweetness.
- Do not overmix the batter, as this can make the donuts dense.
- Add ½ cup chopped walnuts, pecans, or mini chocolate chips for extra texture and flavor.
- For a banana bread-style topping, sprinkle chopped nuts on the glaze before it sets.
- If you don’t have a donut pan, bake the batter in a muffin tin and adjust the baking time to 15–18 minutes.
Storage
- Store in an airtight container at room temperature for up to 3 days.
- Refrigerate for up to 1 week.
- Freeze unglazed donuts for up to 2 months and thaw before serving.
Serving Suggestions
- Enjoy with coffee, tea, or a cold glass of milk.
