Ingredients

For the Donuts

  • 1½ cups (190 g) all-purpose flour
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ½ tsp ground cinnamon
  • ¼ tsp salt
  • ⅓ cup (70 g) brown sugar
  • 2 ripe bananas, mashed (about 1 cup)
  • 1 large egg
  • ¼ cup (60 ml) milk
  • ¼ cup (60 ml) melted butter or vegetable oil
  • 1 tsp vanilla extract

Optional Vanilla Glaze

  • 1 cup (120 g) powdered sugar
  • 2–3 tbsp milk
  • ½ tsp vanilla extract

Instructions

1. Prepare the Oven

  • Preheat the oven to 350°F (175°C).
  • Lightly grease a donut pan.

2. Mix the Dry Ingredients

  • In a medium bowl, whisk together the flour, baking powder, baking soda, cinnamon, and salt.

3. Mix the Wet Ingredients

  • In a separate bowl, combine the mashed bananas, brown sugar, egg, milk, melted butter, and vanilla extract.
  • Stir until smooth.

4. Make the Batter

  • Add the dry ingredients to the wet ingredients.
  • Mix just until combined. Avoid overmixing.

5. Fill the Donut Pan

  • Spoon or pipe the batter into the prepared donut pan, filling each cavity about ¾ full.

6. Bake

  • Bake for 10–12 minutes, or until a toothpick inserted into a donut comes out clean.
  • Let cool in the pan for 5 minutes, then transfer to a wire rack.

7. Glaze (Optional)

  • Whisk together powdered sugar, milk, and vanilla until smooth.
  • Dip the cooled donuts into the glaze and let it set before serving.

Tips

  • Use very ripe bananas with brown spots for the best flavor and sweetness.
  • Do not overmix the batter, as this can make the donuts dense.
  • Add ½ cup chopped walnuts, pecans, or mini chocolate chips for extra texture and flavor.
  • For a banana bread-style topping, sprinkle chopped nuts on the glaze before it sets.
  • If you don’t have a donut pan, bake the batter in a muffin tin and adjust the baking time to 15–18 minutes.

Storage

  • Store in an airtight container at room temperature for up to 3 days.
  • Refrigerate for up to 1 week.
  • Freeze unglazed donuts for up to 2 months and thaw before serving.

Serving Suggestions

  • Enjoy with coffee, tea, or a cold glass of milk.
  • Serve warm with a drizzle of honey or maple syrup.
