  1. Pat the chicken wings dry with paper towels.
  2. In a large bowl, toss wings with baking powder, salt, pepper, garlic powder, and paprika until evenly coated.

2. Cook the Wings

Oven Method

  1. Preheat oven to 425°F (220°C).
  2. Line a baking sheet with foil and place a wire rack on top.
  3. Arrange wings in a single layer.
  4. Bake for 40–45 minutes, flipping halfway through, until golden brown and crispy.

Air Fryer Method

  1. Preheat air fryer to 380°F (193°C).
  2. Cook wings for 20–24 minutes, shaking the basket halfway through.
  3. Increase temperature to 400°F (204°C) for the last 3–4 minutes for extra crispiness.

3. Make the Coconut-Lime Glaze

  1. While the wings cook, combine coconut milk, lime juice, lime zest, honey, soy sauce, garlic, ginger, and red pepper flakes in a saucepan.
  2. Simmer over medium heat for 8–10 minutes until slightly thickened.
  3. Stir occasionally to prevent sticking.

Tips

  • Dry wings thoroughly before cooking for the crispiest texture.
  • Baking powder helps create a crunchy skin without deep frying.
  • Use fresh lime juice and zest for the brightest flavor.
  • Toast the coconut in a dry skillet for 2–3 minutes to enhance its nutty sweetness.
  • For extra heat, add finely chopped chili peppers or additional red pepper flakes.
  • If the glaze becomes too thick, thin it with a tablespoon of water or coconut milk.

Serving Suggestions

  • Serve with coconut rice or jasmine rice.
  • Pair with a mango, pineapple, or cucumber salad.
  • Offer a creamy lime yogurt dip or ranch dressing on the side.
  • Enjoy alongside grilled vegetables for a complete meal.
