Ingredients

For the Chicken

  • 2 boneless, skinless chicken breasts

  • 8 oz (225 g) penne pasta

For Garnish

  • 2 Roma tomatoes, diced
  • 2 tbsp fresh parsley, chopped
  • Extra Parmesan cheese
  • Cajun seasoning, for sprinkling (optional)

Instructions

1. Cook the Pasta

  • Bring a large pot of salted water to a boil.
  • Cook the penne according to package directions until al dente.
  • Drain and set aside.

2. Season the Chicken

  • Rub the chicken breasts with olive oil and Cajun seasoning until evenly coated.

3. Cook the Chicken

  • Heat a large skillet over medium-high heat.
  • Cook the chicken for 5–6 minutes per side, or until fully cooked and golden brown.

5. Combine

  • Add the cooked pasta to the sauce and toss until coated.
  • If needed, add a splash of pasta water to loosen the sauce.

6. Serve

  • Divide the pasta among serving plates.
  • Top with sliced Cajun chicken.
  • Garnish with diced tomatoes, parsley, extra Parmesan, and a light sprinkle of Cajun seasoning.
