Ingredients
For the Salad
- 4–5 ripe tomatoes, sliced or chopped
- 1/2 red onion, thinly sliced
- 1/4 cup fresh basil or parsley, chopped
- 1 cucumber, sliced (optional)

- 3 tbsp olive oil
- 1 tbsp red wine vinegar or balsamic vinegar
- 1 garlic clove, minced

Instructions
1. Prepare the Vegetables
Wash and slice the tomatoes.
Thinly slice onion and cucumber if using.
Place everything in a large serving bowl.
2. Make the Dressing
In a small bowl, whisk together:
- olive oil
- vinegar
- garlic
- salt
- pepper
3. Toss the Salad
Pour dressing over the vegetables.
Add fresh herbs and cheese if using.
Gently toss until coated.
4. Serve
Serve immediately or let sit for 10–15 minutes so the flavors blend together.
Tips
Use Ripe Tomatoes
The better the tomatoes, the better the salad. Vine-ripened or garden tomatoes have the best flavor.
Salt Just Before Serving
