Ingredients

For the Salad

  • 4–5 ripe tomatoes, sliced or chopped
  • 1/2 red onion, thinly sliced
  • 1/4 cup fresh basil or parsley, chopped
  • 1 cucumber, sliced (optional)
  • 1/2 cup feta or mozzarella cheese (optional)

For the Dressing

  • 3 tbsp olive oil
  • 1 tbsp red wine vinegar or balsamic vinegar
  • 1 garlic clove, minced
  • Salt and black pepper to taste

Optional Add-Ins

  • Avocado
  • Olives
  • Cherry tomatoes
  • Croutons
  • Chickpeas

Instructions

1. Prepare the Vegetables

Wash and slice the tomatoes.

Thinly slice onion and cucumber if using.

Place everything in a large serving bowl.


2. Make the Dressing

In a small bowl, whisk together:

  • olive oil
  • vinegar
  • garlic
  • salt
  • pepper

3. Toss the Salad

Pour dressing over the vegetables.

Add fresh herbs and cheese if using.

Gently toss until coated.


4. Serve

Serve immediately or let sit for 10–15 minutes so the flavors blend together.


Tips

Use Ripe Tomatoes

The better the tomatoes, the better the salad. Vine-ripened or garden tomatoes have the best flavor.

Salt Just Before Serving

Salt draws out moisture, so adding it too early can make the salad watery.

Add Protein

Turn it into a meal with:

  • grilled chicken
  • tuna
  • chickpeas
  • hard-boiled eggs

Chill or Room Temperature?

Tomatoes taste best slightly cool or at room temperature — avoid serving them too cold.
