Ingredients

For the Chicken

  • 4 boneless, skinless chicken breasts or thighs

  • 2 tbsp honey
  • 1 tbsp lime juice
  • 1 tbsp apple cider vinegar
  • 2 cloves garlic, minced
  • ¼ tsp salt

Instructions

1. Prepare the Glaze

  1. In a small saucepan, combine strawberries, jalapeños, honey, lime juice, vinegar, garlic, and salt.
  2. Cook over medium heat for 8–10 minutes, stirring occasionally.
  3. As the strawberries soften, gently mash them with a spoon.
  4. Simmer until the mixture thickens slightly.
  5. Remove from heat and blend for a smoother sauce if desired.

2. Season the Chicken

  1. Pat the chicken dry with paper towels.
  2. Rub with olive oil.
  3. Season evenly with garlic powder, paprika, salt, and pepper.

3. Cook the Chicken

Grill Method:

  1. Preheat grill to medium-high heat.
  2. Grill chicken for 5–7 minutes per side until nearly cooked through.
  3. Brush generously with strawberry-jalapeño glaze during the last few minutes of cooking.
  4. Continue cooking until the internal temperature reaches 165°F (74°C).

Skillet Method:

  1. Heat a large skillet over medium-high heat.
  2. Cook chicken for 5–6 minutes per side.
  3. Add the glaze during the final 2–3 minutes and let it caramelize slightly.

4. Serve

  1. Let the chicken rest for 5 minutes.
  2. Spoon extra glaze over the top.
  3. Garnish with cilantro, fresh strawberries, and jalapeño slices.

  • Use ripe strawberries for the best natural sweetness.
  • Adjust the heat level by adding more or fewer jalapeños.
  • For a smoky flavor, grill the jalapeños before adding them to the glaze.
  • Chicken thighs stay especially juicy and work beautifully with the sweet-spicy sauce.
  • Make extra glaze and use it as a dipping sauce or sandwich spread.
