Instructions
1. Prepare the Glaze
- In a small saucepan, combine strawberries, jalapeños, honey, lime juice, vinegar, garlic, and salt.
- Cook over medium heat for 8–10 minutes, stirring occasionally.
- As the strawberries soften, gently mash them with a spoon.
- Simmer until the mixture thickens slightly.
- Remove from heat and blend for a smoother sauce if desired.
2. Season the Chicken
- Pat the chicken dry with paper towels.
- Rub with olive oil.
- Season evenly with garlic powder, paprika, salt, and pepper.
3. Cook the Chicken
Grill Method:
- Preheat grill to medium-high heat.
- Grill chicken for 5–7 minutes per side until nearly cooked through.
- Brush generously with strawberry-jalapeño glaze during the last few minutes of cooking.
- Continue cooking until the internal temperature reaches 165°F (74°C).
Skillet Method:
- Heat a large skillet over medium-high heat.
- Cook chicken for 5–6 minutes per side.
- Add the glaze during the final 2–3 minutes and let it caramelize slightly.
4. Serve
- Let the chicken rest for 5 minutes.
- Spoon extra glaze over the top.
- Garnish with cilantro, fresh strawberries, and jalapeño slices.
