Ingredients

  • 1½ cups granulated sugar

  • 2 teaspoons pure vanilla extract
  • 2 cups plain Greek yogurt
  • ¼ cup whole milk

For the Vanilla Glaze

  • 2 cups powdered sugar
  • 3–4 tablespoons milk
  • 1 teaspoon vanilla extract

Instructions

Step 1: Prepare the Oven and Pan

Preheat your oven to 350°F (175°C).

Grease a 13×18-inch sheet pan or line it with parchment paper for easy removal.

Step 2: Make the Cinnamon Streusel

In a medium mixing bowl, combine:

  • Flour
  • Brown sugar
  • Cinnamon
  • Salt

Pour in the melted butter and stir until crumbly clusters form.

The mixture should resemble coarse crumbs with some larger pieces.

Place in the refrigerator while preparing the cake batter.


Step 3: Mix the Dry Ingredients

In a large bowl, whisk together:

Step 6: Add the Greek Yogurt

Mix in the Greek yogurt until smooth.

The batter may look slightly thick, which is normal.

Greek yogurt provides moisture, richness, and a delicate tang that makes this cake exceptionally soft.


Step 7: Combine Wet and Dry Ingredients

Gradually add the dry ingredients to the wet ingredients.

Pour in the milk and mix on low speed until just combined.

Do not overmix, as this can make the cake dense.

The batter should be thick and creamy.


Step 8: Assemble the Coffee Cake

Spread the batter evenly into the prepared sheet pan.

Use an offset spatula to smooth the surface.

Sprinkle the chilled streusel evenly over the top, covering the entire cake.

Place the pan in the preheated oven.

Bake for 30–35 minutes, or until the top is golden brown and a toothpick inserted into the center comes out clean.

The streusel should be crisp and fragrant.

Allow it to cool in the pan for about 20 minutes before glazing.


Step 11: Make the Vanilla Glaze

In a small bowl, whisk together:

  • Powdered sugar
  • Milk
  • Vanilla extract

Continue whisking until smooth and pourable.

Add more milk if needed to achieve the desired consistency.

Drizzle the vanilla glaze generously over the slightly warm or fully cooled coffee cake.

Allow the glaze to set for 10 minutes before slicing.
