Instructions
Step 1: Prepare the Ingredients
If using fresh corn, bring a pot of salted water to a boil and cook the corn for 4–5 minutes until just tender. Allow it to cool, then cut the kernels from the cob.
Drain and rinse the black beans and black-eyed peas thoroughly.
Dice the bell peppers, onion, jalapeño, tomatoes, and avocado. Slice the green onions and chop the cilantro.
Step 2: Make the Dressing
In a small bowl or jar, whisk together:
- Olive oil
- Lime juice
- Red wine vinegar
- Honey
- Dijon mustard
- Garlic
- Ground cumin
- Chili powder
- Smoked paprika
- Salt
- Black pepper
Whisk until smooth and well combined.
Taste and adjust the seasoning if needed.
Step 3: Assemble the Cowboy Caviar
In a large mixing bowl, combine:
- Black beans
- Black-eyed peas
- Corn
- Cherry tomatoes
- Red bell pepper
- Yellow bell pepper
- Red onion
- Jalapeño (if using)
- Green onions
- Cilantro
Pour the dressing over the mixture and gently toss until everything is evenly coated.
Cover and refrigerate for 30 minutes to allow the flavors to blend.
Step 4: Add the Avocado
Just before serving, gently fold in the diced avocado to keep it fresh and prevent it from becoming mushy.
Transfer the Cowboy Caviar to a serving bowl.
Step 5: Garnish and Serve
Garnish with extra cilantro, crumbled cotija or feta cheese, sliced jalapeños, and a squeeze of fresh lime juice if desired.
Serve chilled or at room temperature with tortilla chips, or use it as a topping for tacos, grilled meats, burrito bowls, or salads.

Chef’s Tips
- Fresh corn adds the sweetest flavor, but frozen corn is a convenient alternative.
- Chill the salad before serving to allow the dressing to fully develop its flavor.
- Add the avocado just before serving to maintain its texture and color.
- For extra heat, leave some jalapeño seeds or add a pinch of cayenne pepper.
- If making ahead, prepare everything except the avocado and mix it in right before serving.
- Taste before serving and add an extra squeeze of lime juice if needed for brightness.
Variations
Southwest Cowboy Caviar
Add diced cucumber and crumbled queso fresco for a lighter, refreshing twist.
Protein-Packed Version
Mix in grilled chicken, shrimp, or diced grilled steak for a hearty main dish.
Mango Cowboy Caviar
Add 1 cup diced fresh mango or pineapple for a sweet and tropical flavor.
Creamy Cowboy Caviar
Stir in a few tablespoons of Greek yogurt or mashed avocado to create a creamy dressing.
Storage
- Refrigerator: Store in an airtight container for up to 3 days.
