Ingredients

For the Zucchini Boats

  • 4 medium zucchini
  • 1 tablespoon olive oil
  • ½ teaspoon salt

For the Burrito Filling

  • 1 pound (450 g) lean ground beef (or ground turkey)
  • 1 tablespoon olive oil
  • 1 small onion, finely diced
  • 3 cloves garlic, minced
  • 1 teaspoon chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • ½ teaspoon dried oregano
  • ½ teaspoon onion powder
  • ½ teaspoon garlic powder
  • ¼ teaspoon cayenne pepper (optional)
  • Salt and black pepper, to taste
  • 1 cup cooked white or brown rice
  • 1 cup black beans, drained and rinsed
  • ¾ cup corn kernels (fresh, canned, or frozen)
  • 1 cup diced tomatoes (fresh or canned, drained)
  • ½ cup tomato sauce or salsa
  • 1 tablespoon tomato paste
  • ½ cup chopped fresh cilantro

For the Cheese Topping

  • 1½ cups shredded Mexican cheese blend or cheddar cheese
  • ¼ cup grated Monterey Jack cheese (optional)

Instructions

Step 1: Prepare the Zucchini

Preheat your oven to 400°F (200°C).

Wash and dry the zucchini. Slice each zucchini in half lengthwise. Using a spoon or melon baller, carefully scoop out the center flesh, leaving about a ¼-inch shell around the edges. Reserve some of the scooped zucchini flesh and finely chop it to add to the filling.

Brush the zucchini halves with olive oil and season lightly with salt and black pepper. Arrange them in a lightly greased baking dish.

Bake the empty zucchini boats for 10 minutes to soften them slightly before filling.


Step 2: Cook the Burrito Filling

Heat the olive oil in a large skillet over medium-high heat.

Add the diced onion and cook for about 4–5 minutes, until softened. Stir in the garlic and cook for another minute until fragrant.

Add the ground beef and cook until browned, breaking it into small crumbles with a spoon. Drain any excess fat if needed.

Mix in the chili powder, cumin, smoked paprika, oregano, onion powder, garlic powder, cayenne pepper (if using), salt, and black pepper. Cook for 1–2 minutes to toast the spices.

Stir in the chopped zucchini flesh, tomato paste, tomato sauce (or salsa), diced tomatoes, black beans, corn, and cooked rice. Simmer for 5–7 minutes, stirring occasionally, until the mixture thickens slightly.

Remove from the heat and stir in the chopped cilantro.


Step 3: Fill the Zucchini Boats

Remove the partially baked zucchini from the oven.

Spoon the burrito filling generously into each zucchini boat, gently pressing the filling to pack it in.

Sprinkle the shredded Mexican cheese blend evenly over the tops. Add Monterey Jack cheese if desired for an extra cheesy finish.


Step 4: Bake

Cover the baking dish loosely with aluminum foil.

Bake for 15 minutes.

Remove the foil and continue baking for another 8–10 minutes, or until the zucchini is tender and the cheese is melted, bubbly, and lightly golden.

For extra browning, broil for 2–3 minutes, watching carefully to prevent burning.


Step 5: Garnish and Serve

Let the zucchini boats cool for about 5 minutes before serving.

Top with sour cream, guacamole, fresh salsa, avocado slices, chopped cilantro, diced red onion, jalapeños, or your favorite burrito toppings. Serve with lime wedges for a bright, fresh finish.
