Equipment

  • Measuring cups and spoons
  • Paper towels or wire rack

Instructions

Step 1: Prepare the Corn

If using fresh corn, remove the kernels from the cob.

If using frozen corn, thaw completely and pat dry.

If using canned corn, drain well to prevent the fritters from becoming watery.

For extra flavor, lightly sauté the corn in a dry skillet for 3–5 minutes until slightly golden before adding it to the batter.

Step 2: Prepare the Batter

In a large bowl, whisk together:

  • Eggs
  • Milk

until smooth.

Add:

  • Flour
  • Cornmeal
  • Baking powder

Mix until combined.

The batter should be thick but spoonable.

Step 3: Add the Flavor Ingredients

Fold in:

  • Corn kernels
  • Cheddar cheese
  • Green onions
  • Cilantro or parsley
  • Garlic
  • Jalapeño
  • Smoked paprika
  • Garlic powder
  • Onion powder
  • Cumin
  • Salt
  • Black pepper
  • Chili flakes

Mix gently until all ingredients are evenly distributed.

Let the batter rest for 5–10 minutes to allow the flour to absorb moisture.

Step 4: Cook the Corn Fritters

Heat oil in a large skillet over medium heat.

Once hot, scoop about ¼ cup of batter into the pan for each fritter.

Flatten slightly with the back of a spoon.

Cook for:

3–4 minutes per side

until:

  • Golden brown
  • Crispy around the edges
  • Cooked through the center

Avoid overcrowding the pan; cook in batches if needed.

Step 5: Drain and Serve

Transfer cooked fritters to a wire rack or paper towel-lined plate.

Season lightly with salt while warm.

Serve immediately with your favorite dipping sauce.

Chef’s Tips

  • Remove excess moisture from corn before mixing the batter for crispier fritters.
  • Do not make the batter too thin; thick batter creates better texture.
  • Freshly grated cheese melts better and adds more flavor.
  • Keep the oil temperature steady for even browning.
  • Avoid pressing fritters too flat; they should stay fluffy inside.
  • Add fresh herbs at the end for brighter flavor.
  • Resting the batter improves the texture and helps prevent spreading.
