Instructions
Step 1: Prepare the Corn
If using fresh corn, remove the kernels from the cob.
If using frozen corn, thaw completely and pat dry.
If using canned corn, drain well and remove excess moisture.
Place about half of the corn kernels into a blender or food processor and pulse several times until lightly mashed. Leave some texture so the cookies have small pieces of corn throughout.
Set aside.
Step 2: Prepare the Baking Sheets
Preheat your oven to:
350°F (175°C)
Line two baking sheets with parchment paper.
This prevents sticking and helps the cookies bake evenly.
Step 3: Cream the Butter and Sugar
In a large bowl, beat the softened butter, granulated sugar, and brown sugar together for 2–3 minutes until light, fluffy, and creamy.
Properly creaming the butter helps create a soft cookie texture.
Step 4: Add Wet Ingredients
Add:
- Egg
- Vanilla extract
- Honey
- Mashed corn mixture
Beat until fully combined.
The mixture may look slightly curdled because of the corn, which is normal.
Step 5: Combine Dry Ingredients
In a separate bowl, whisk together:
- All-purpose flour
- Cornmeal
- Baking powder
- Baking soda
- Salt
Gradually add the dry ingredients to the wet mixture.
Mix gently until just combined.
Avoid overmixing, as this can make the cookies dense.
Step 6: Add Extra Ingredients
Fold in:
- Remaining corn kernels
- White chocolate chips (if using)
- Coconut, nuts, or spices (optional)
Mix until evenly distributed.
Step 7: Chill the Dough
Cover the cookie dough and refrigerate for at least:
1 hour
Chilling helps the cookies maintain their shape and creates a chewier texture.
Step 8: Shape the Cookies
Use a cookie scoop or tablespoon to portion the dough.
Place cookies onto prepared baking sheets, leaving about 2 inches between each cookie.
Gently flatten the tops slightly with your fingers or the back of a spoon.
Sprinkle with coarse sugar or flaky sea salt if desired.
Step 9: Bake
Bake for:
12–15 minutes
until:
- The edges are lightly golden.
- The centers look set but remain soft.
Do not overbake; these cookies are best when slightly chewy.
Step 10: Cool and Serve
Allow cookies to cool on the baking sheet for 5 minutes.
Transfer them to a wire rack to cool completely.
Serve with coffee, tea, milk, or ice cream.

Chef’s Tips
- Use sweet summer corn for the strongest corn flavor.
- Do not add wet corn without draining it, as excess moisture can make cookies spread.
- Chilling the dough is important because corn adds moisture.
- Fine cornmeal creates the best texture; coarse cornmeal may make cookies gritty.
- For extra flavor, lightly roast the corn before adding it to the dough.
- A sprinkle of flaky salt balances the sweetness beautifully.
- White chocolate pairs especially well with the sweet corn flavor.
