Ingredients

Ground Beef (1 lb)

Adds rich, hearty flavor. You can also use chicken or turkey.

Pasta (8 oz)

Shells, rotini, or macaroni work best because they hold the sauce well.

Onion (1 small, diced)

Adds sweetness and depth to the dish.

Garlic (2 cloves, minced)

Enhances savory flavor.

Taco Seasoning (2–3 tbsp)

Provides classic taco flavor with chili powder, cumin, paprika, and spices.

Diced Tomatoes (1 can)

Adds moisture and slight acidity.

Tomato Sauce (1 cup)

Creates a rich base for the sauce.

Beef Broth or Water (2 cups)

Helps cook the pasta and develop flavor.

Cream Cheese or Heavy Cream (optional)

Makes the sauce extra creamy.

Shredded Cheddar Cheese (2 cups)

Melts into the pasta for a cheesy finish.

Salt & Pepper

Balances and enhances flavors.

Optional Toppings

  • Sour cream
  • Green onions
  • Jalapeños
  • Cilantro
  • Crushed tortilla chips

Instructions

1. Cook the Beef

Heat a large skillet over medium heat.

Cook ground beef until browned. Drain excess grease if needed.

Add onion and cook until softened, about 3 minutes.

Stir in garlic and cook 30 seconds.

2. Add Seasoning

Mix in taco seasoning until the beef is evenly coated.

3. Add Pasta & Liquids

Add:

  • pasta
  • diced tomatoes
  • tomato sauce
  • broth or water

Stir well.

Bring to a gentle boil.

4. Simmer

Reduce heat to low.

Cover and cook 12–15 minutes, stirring occasionally, until pasta is tender.

Add extra broth if needed.

5. Add Cheese

Stir in cream cheese or cream if using.

Add shredded cheddar cheese and mix until melted and creamy.

6. Serve

Top with your favorite taco toppings and serve hot.

Tips

Use Freshly Shredded Cheese

It melts smoother than pre-shredded cheese.

Don’t Overcook the Pasta

Cook just until tender to avoid mushiness.

Make It Spicier

Add jalapeños, hot sauce, or pepper flakes.

Add Vegetables

Corn, bell peppers, or black beans work great.

One-Pot Version

Cook everything in the same skillet for easier cleanup.

Storage

Refrigerate up to 3 days. Add a splash of milk when reheating.

Optional Variations

  • Use ground turkey for a lighter version
  • Add nacho cheese sauce
  • Make it extra spicy with chipotle peppers
  • Turn it into a baked casserole with extra cheese on top
