  • ¼ teaspoon fine sea salt
  • 4 tablespoons unsalted butter
  • 2 large eggs
  • 1½ cups whole milk or unsweetened almond milk
  • ½ cup plain Greek yogurt
  • ⅓ cup pure maple syrup or honey
  • 2 teaspoons vanilla extract
  • 2 cups fresh strawberries, diced

Optional Mix-Ins

  • ¼ cup sliced almonds
  • 2 tablespoons ground flaxseed
  • 2 tablespoons chia seeds
  • ¼ cup white chocolate chips
  • ½ teaspoon lemon zest
  • ¼ cup chopped pecans

Optional Toppings

  • Fresh sliced strawberries
  • Vanilla Greek yogurt
  • Maple syrup
  • Toasted almonds
  • Powdered sugar
  • Fresh mint leaves
  • Whipped cream (optional)

Equipment

  • 8×8-inch baking dish
  • Small saucepan
  • Large mixing bowl
  • Medium mixing bowl
  • Whisk
  • Rubber spatula
  • Measuring cups and spoons
  • Cooling rack

Instructions

Step 1: Prepare the Oven

Preheat the oven to 350°F (175°C).

Lightly grease an 8×8-inch baking dish with butter or nonstick cooking spray.

Step 2: Brown the Butter

Place the butter in a small saucepan over medium heat.

Cook, stirring frequently, until the butter melts, foams, and develops golden-brown specks with a rich, nutty aroma, about 4–6 minutes.

Remove from the heat immediately and let it cool slightly.

Step 3: Mix the Dry Ingredients

In a large bowl, combine:

  • Rolled oats
  • Baking powder
  • Ground cinnamon
  • Salt

Whisk until evenly mixed.

Step 4: Mix the Wet Ingredients

In a separate bowl, whisk together:

  • Eggs
  • Milk
  • Greek yogurt
  • Maple syrup or honey
  • Vanilla extract
  • Brown butter

Whisk until smooth and fully combined.

Step 5: Combine the Batter

Pour the wet ingredients into the dry ingredients.

Stir until the oats are evenly coated.

Fold in the diced strawberries and any optional mix-ins such as almonds, flaxseed, chia seeds, white chocolate chips, or lemon zest.

Allow the mixture to rest for 5 minutes so the oats can absorb some of the liquid.

Step 6: Fill the Baking Dish

Transfer the oatmeal mixture to the prepared baking dish.

Spread it into an even layer.

Top with a few extra strawberry slices and sliced almonds, if desired.

Step 7: Bake

Bake for 35–40 minutes, or until the center is set and the top is lightly golden.

A toothpick inserted into the center should come out mostly clean.

Step 8: Cool

Remove the baked oatmeal from the oven.

Allow it to cool for 5–10 minutes before slicing and serving.

Step 9: Garnish and Serve

Top with fresh strawberries, vanilla Greek yogurt, toasted almonds, a drizzle of maple syrup, or a light dusting of powdered sugar.

Serve warm and enjoy.
