Ingredients

  • 3 cups cooked rice (basmati or jasmine)
  • 1 cucumber, diced
  • 2 tomatoes, diced
  • ½ red onion, thinly sliced
  • 1 cup shredded lettuce
  • Fresh parsley, chopped

Garlic Yogurt Sauce

  • 1 cup plain Greek yogurt
  • 2 cloves garlic, minced
  • 1 tbsp lemon juice
  • ¼ tsp salt

Optional Toppings

  • Pickled onions
  • Crumbled feta cheese

  • Olives
  • Tahini sauce

Instructions

1. Marinate the Chicken

  1. In a large bowl, combine olive oil, garlic, lemon juice, and all spices.
  2. Add chicken and coat thoroughly.
  3. Cover and marinate for at least 30 minutes, preferably 2–8 hours.

2. Cook the Chicken

  1. Heat a skillet or grill pan over medium-high heat.
  2. Cook chicken for 5–7 minutes per side, or until fully cooked and slightly charred.
  3. Rest for 5 minutes, then slice into strips.

3. Make the Sauce

  1. Mix yogurt, garlic, lemon juice, and salt in a small bowl.
  2. Refrigerate until ready to serve.

4. Assemble the Bowls

  1. Divide rice among serving bowls.
  2. Arrange chicken, cucumber, tomato, onion, and lettuce on top.
  3. Drizzle with garlic yogurt sauce.
  4. Garnish with parsley and any optional toppings.
