Instructions

Step 1: Prepare the Ingredients

If using fresh corn, bring a pot of salted water to a boil and cook the corn for 4–5 minutes until just tender. Allow it to cool, then cut the kernels from the cob.

Drain and rinse the black beans and black-eyed peas thoroughly.

Dice the bell peppers, onion, jalapeño, tomatoes, and avocado. Slice the green onions and chop the cilantro.


Step 2: Make the Dressing

In a small bowl or jar, whisk together:

  • Olive oil
  • Lime juice
  • Red wine vinegar
  • Honey
  • Dijon mustard
  • Garlic
  • Ground cumin
