Instructions
Step 1: Prepare the Cauliflower
Preheat the oven to 425°F (220°C).
Wash and thoroughly dry the cauliflower. Remove the leaves and thick core, then cut the cauliflower into florets.
Pulse the florets in a food processor until they resemble fine rice. Avoid over-processing into a puree.
Transfer the cauliflower rice to a microwave-safe bowl and microwave for 5–6 minutes, or steam it for 8–10 minutes until tender.
Allow it to cool for 10–15 minutes.
Place the cooked cauliflower in a clean kitchen towel or cheesecloth. Twist tightly and squeeze out as much liquid as possible. This step is essential for a firm, crispy crust.
Step 2: Make the Crust Mixture
In a large mixing bowl, combine the drained cauliflower with:
- Egg
- Parmesan cheese
- Mozzarella cheese
- Italian seasoning
- Garlic powder
- Onion powder
- Oregano
- Salt
- Black pepper
- Parsley (if using)
Mix thoroughly until the ingredients are evenly incorporated and the mixture holds together when pressed.
Step 3: Shape the Crust
Line a baking sheet or pizza pan with parchment paper and lightly grease it.
Transfer the cauliflower mixture onto the prepared pan.
Using your hands or the back of a spoon, press it into a 12-inch circle or rectangle about ¼ inch thick, making the edges slightly thicker to resemble a traditional pizza crust.
Smooth out any cracks around the edges.
Step 4: Bake the Crust
Bake for 30–35 minutes, or until the crust is golden brown and firm to the touch.
For an even crispier crust, carefully flip it over using a second sheet of parchment paper or a large spatula and bake for an additional 8–10 minutes.
Step 5: Add the Toppings
Remove the baked crust from the oven.
Spread the pizza sauce evenly over the crust, leaving a small border around the edges.
Sprinkle the mozzarella and Parmesan cheeses over the sauce.
Add the bell peppers, mushrooms, onions, and black olives, distributing them evenly.
Feel free to customize with your favorite toppings such as cooked chicken, turkey pepperoni, spinach, or roasted vegetables.
Step 6: Bake Again
Return the pizza to the oven and bake for 10–15 minutes, or until the cheese is melted, bubbly, and lightly golden.
For extra browning, broil for 1–2 minutes, watching carefully to avoid burning.
Step 7: Finish and Serve
Remove the pizza from the oven and let it rest for 5 minutes before slicing.
Garnish with fresh basil leaves, extra Parmesan cheese, and a pinch of crushed red pepper flakes if desired.
Slice and serve warm.
Serving Suggestions
Pair your cauliflower pizza with:
- Caesar salad
- Mixed green salad with vinaigrette
- Roasted vegetables
- Tomato soup
- Grilled chicken
- Garlic green beans
Storage
- Refrigerate leftover pizza in an airtight container for up to 4 days.
- Freeze the baked crust (without toppings) for up to 3 months. Wrap tightly in plastic wrap and foil before freezing.
Reheating
- Oven: Bake at 375°F (190°C) for 8–10 minutes until crisp and heated through.
- Air Fryer: Heat at 350°F (175°C) for 4–6 minutes.
- Microwave: Heat for 1–2 minutes, though the crust will be softer.
Tips for Success
- Squeeze out as much moisture as possible from the cooked cauliflower to achieve a crisp crust.
- Use freshly grated Parmesan and mozzarella for the best texture and flavor.
- Don’t overload the pizza with sauce or toppings, as excess moisture can make the crust soggy.
- Pre-baking the crust before adding toppings is essential for a sturdy base.
- For a keto-friendly version, replace the pizza sauce with a low-sugar tomato sauce and choose low-carb toppings.
- Experiment with seasonings like smoked paprika, crushed fennel seeds, or fresh herbs to create your own signature flavor.
