- 1 cup packed light brown sugar
- 2 teaspoons ground cinnamon
- ¼ teaspoon salt
- ¾ cup unsalted butter, melted
For the Coffee Cake
- 3 cups all-purpose flour
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- ½ teaspoon salt
- 1 teaspoon ground cinnamon
- 1 cup unsalted butter, softened
- 1½ cups granulated sugar
- 4 large eggs, room temperature
- 2 teaspoons pure vanilla extract
- 2 cups plain Greek yogurt
- ¼ cup whole milk
For the Vanilla Glaze
- 2 cups powdered sugar
- 3–4 tablespoons milk
- 1 teaspoon vanilla extract
Instructions
Step 1: Prepare the Oven and Pan
Preheat your oven to 350°F (175°C).
Grease a 13×18-inch sheet pan or line it with parchment paper for easy removal.
Set aside while preparing the batter and streusel.
Step 2: Make the Cinnamon Streusel
In a medium mixing bowl, combine:
- Flour
- Brown sugar
- Cinnamon
- Salt
Pour in the melted butter and stir until crumbly clusters form.
The mixture should resemble coarse crumbs with some larger pieces.
Place in the refrigerator while preparing the cake batter.
Step 3: Mix the Dry Ingredients
In a large bowl, whisk together:
- Flour
- Baking powder
- Baking soda
- Salt
- Cinnamon
Mix well and set aside.
Step 4: Cream the Butter and Sugar
In a large mixing bowl, beat the softened butter and granulated sugar using an electric mixer.
Mix for 3–4 minutes until light, fluffy, and pale in color.
This step helps create a tender, airy cake texture.
Step 5: Add the Eggs and Vanilla
Add the eggs one at a time, beating well after each addition.
Mix in the vanilla extract.
Scrape down the sides of the bowl as needed to ensure everything is fully incorporated.
Step 6: Add the Greek Yogurt
Mix in the Greek yogurt until smooth.
The batter may look slightly thick, which is normal.
Greek yogurt provides moisture, richness, and a delicate tang that makes this cake exceptionally soft.
Step 7: Combine Wet and Dry Ingredients
Gradually add the dry ingredients to the wet ingredients.
Pour in the milk and mix on low speed until just combined.
Do not overmix, as this can make the cake dense.
The batter should be thick and creamy.
Step 8: Assemble the Coffee Cake
Spread the batter evenly into the prepared sheet pan.
Use an offset spatula to smooth the surface.
Sprinkle the chilled streusel evenly over the top, covering the entire cake.
Gently press some of the larger crumbs into the batter so they adhere during baking.
Step 9: Bake
Place the pan in the preheated oven.
Bake for 30–35 minutes, or until the top is golden brown and a toothpick inserted into the center comes out clean.
The streusel should be crisp and fragrant.
Avoid overbaking to maintain a moist texture.
Step 10: Cool
Remove the cake from the oven and place it on a wire rack.
Allow it to cool in the pan for about 20 minutes before glazing.
Step 11: Make the Vanilla Glaze
In a small bowl, whisk together:
- Powdered sugar
- Milk
- Vanilla extract
Continue whisking until smooth and pourable.
Add more milk if needed to achieve the desired consistency.
Step 12: Glaze the Cake
Drizzle the vanilla glaze generously over the slightly warm or fully cooled coffee cake.
Allow the glaze to set for 10 minutes before slicing.
Tips for the Best Coffee Cake
Use Full-Fat Greek Yogurt
Full-fat Greek yogurt creates the richest flavor and moistest crumb.
Chill the Streusel
Cold streusel holds its shape better and creates larger crunchy clusters.
Don’t Overmix
Mix only until the ingredients are combined to keep the cake light and tender.
Room Temperature Ingredients
Butter, eggs, and yogurt blend more smoothly and create a more even batter.
Let the Cake Cool Slightly
Glazing a slightly warm cake allows some glaze to soak in while still creating a beautiful finish.
