Ingredients

For the French Toast

  • 8 slices thick-cut day-old bread (brioche-style vegan bread, sourdough, or Texas toast)
  • 1½ cups unsweetened oat milk (or almond, soy, or cashew milk)
  • 3 tablespoons cornstarch
  • 2 tablespoons maple syrup
  • 1 tablespoon ground flaxseed (optional, for extra richness)
  • 1 teaspoon pure vanilla extract
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg
  • ¼ teaspoon salt
  • 1 tablespoon vegan butter or coconut oil, for cooking

Optional Toppings

  • Maple syrup
  • Fresh strawberries
  • Blueberries
  • Sliced bananas
  • Powdered sugar
  • Vegan whipped cream
  • Chopped pecans or walnuts
  • Toasted coconut flakes
  • Nut butter
  • Fresh mint leaves

Instructions

Step 1: Make the Batter

In a shallow bowl, whisk together the oat milk, cornstarch, maple syrup, flaxseed (if using), vanilla extract, cinnamon, nutmeg, and salt until smooth and well combined. Let the mixture rest for 5 minutes to allow the flaxseed and cornstarch to hydrate.

Step 2: Heat the Pan

Heat a large nonstick skillet or griddle over medium heat.

Add a small amount of vegan butter or coconut oil and allow it to melt, coating the surface evenly.

Step 3: Dip the Bread

Dip one slice of bread into the batter for about 10–15 seconds per side, allowing it to absorb some of the mixture without becoming overly soggy.

Let any excess batter drip back into the bowl before placing the bread in the skillet.

Step 4: Cook the French Toast

Cook each slice for 3–4 minutes per side, or until golden brown and slightly crisp on the outside.

Adjust the heat if needed to prevent the toast from browning too quickly before the center is fully cooked.

Repeat with the remaining bread, adding more vegan butter or oil as needed.

Step 5: Serve

Serve immediately while warm with your favorite toppings such as maple syrup, fresh fruit, powdered sugar, chopped nuts, or vegan whipped cream.

Tips for the Best Vegan French Toast

  • Use slightly stale or day-old bread so it absorbs the batter without falling apart.
  • Whisk the batter well to fully dissolve the cornstarch.
  • Thick-cut bread produces the best soft interior and crisp exterior.
  • Cook over medium heat to ensure even browning.
  • Avoid soaking the bread for too long, which can make it overly soft.
  • Keep cooked slices warm in a 200°F (95°C) oven while preparing the remaining batches.
  • Add a pinch of cardamom or pumpkin pie spice for extra warmth and flavor.
  • Serve immediately for the crispiest texture.

Variations

Banana Cinnamon French Toast

Mash half a ripe banana into the batter for extra sweetness and richness.

Pumpkin Spice French Toast

Whisk in ¼ cup pumpkin purée and 1 teaspoon pumpkin pie spice for a cozy fall version.

Storage

Recipe Notes

  • Thick, sturdy bread such as sourdough or Texas toast works best because it absorbs the batter while maintaining its shape.
  • Cornstarch helps create the classic golden, slightly crisp exterior without using eggs.
  • Oat milk provides a creamy texture, but any unsweetened plant-based milk can be substituted.
  • This recipe is easy to customize with seasonal spices, fruit, nuts, or flavored syrups.
  • Vegan French Toast is perfect for weekend brunches, holiday breakfasts, meal prep, or whenever you’re craving a comforting plant-based breakfast.
