Instructions
Step 1: Season the Chicken
Pat the chicken breasts dry with paper towels.
Rub them with olive oil, oregano, garlic powder, smoked paprika, salt, and black pepper until evenly coated.
Let the chicken sit for 10–15 minutes while you prepare the dressing.
Step 2: Make the Tzatziki Dressing
Grate the cucumber and squeeze out as much liquid as possible using a clean kitchen towel or paper towels.
In a medium bowl, combine the Greek yogurt, grated cucumber, garlic, lemon juice, olive oil, dill, mint (if using), salt, and black pepper.
Mix until smooth and refrigerate while the chicken cooks to allow the flavors to meld.
Step 3: Cook the Chicken
Heat a grill, grill pan, or skillet over medium-high heat.
Cook the chicken for 6–7 minutes per side, or until the internal temperature reaches 165°F (74°C).
Transfer the chicken to a cutting board and let it rest for 5 minutes before slicing into strips or bite-sized pieces.
Step 4: Prepare the Salad
In a large serving bowl, combine the chopped romaine lettuce, cherry tomatoes, diced cucumber, sliced red onion, feta cheese, Kalamata olives, and parsley.
Toss gently to combine.
Step 5: Assemble the Salad
Add the sliced chicken to the salad.
Spoon the tzatziki dressing over the top and toss gently until everything is evenly coated.
Alternatively, serve the dressing on the side for individual portions.
Step 6: Garnish and Serve
Garnish with extra dill, mint, cracked black pepper, and lemon wedges.
Serve immediately while the chicken is warm or chill for a refreshing cold salad.

Storage
Store leftover Tzatziki Chicken Salad in an airtight container in the refrigerator for up to 3 days.
For the best texture, keep the tzatziki dressing separate from the salad if preparing ahead. Add the dressing just before serving to prevent the lettuce from becoming soggy.
The cooked chicken and tzatziki dressing can each be refrigerated separately for up to 4 days. Freezing is not recommended, as the yogurt-based dressing and fresh vegetables may lose their texture after thawing.
