  • 1½ pounds (680g) fresh strawberries, hulled and sliced
  • ½ cup granulated sugar (adjust to taste depending on the sweetness of the berries)
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon vanilla extract
  • 1 tablespoon cornstarch
  • 2 tablespoons cold water
  • Pinch of salt

  • ½ teaspoon almond extract
  • 1 tablespoon honey for extra sweetness

Instructions

Step 1: Prepare the Strawberries

Wash, hull, and slice the strawberries into even pieces.

If using frozen strawberries, there is no need to thaw them before cooking.


Step 2: Cook the Fruit

In a medium saucepan, combine the strawberries, sugar, lemon juice, and a pinch of salt.

Place the saucepan over medium heat and stir gently.

As the berries cook, they will begin releasing their natural juices.

Simmer for about 8–10 minutes, stirring occasionally, until the strawberries soften and begin to break down.


Step 3: Thicken the Sauce

In a small bowl, whisk together the cornstarch and cold water until smooth.

Slowly pour the slurry into the simmering strawberry mixture while stirring constantly.

Continue cooking for another 2–3 minutes, or until the sauce thickens to your desired consistency.


Step 4: Add the Vanilla

Remove the saucepan from the heat.

Stir in the vanilla extract and, if using, the lemon zest or almond extract.

For a smoother sauce, use the back of a spoon to mash some of the strawberries, or blend the sauce with an immersion blender until it reaches your preferred texture.


Step 5: Cool

Allow the strawberry sauce to cool for about 10–15 minutes.

The sauce will continue to thicken slightly as it cools.

Serve warm or refrigerate until chilled.


Step 6: Serve

Spoon the strawberry sauce over your favorite desserts and breakfasts, or use it as a filling for cakes and pastries.

Garnish with fresh strawberries or mint leaves if desired.
