Ingredients

For the Filling

  • 2 cups heavy whipping cream, cold
  • 8 ounces cream cheese, softened
  • ½ cup powdered sugar
  • 1 teaspoon pure vanilla extract

For the Layers

  • 1½ pounds fresh strawberries, hulled and sliced
  • 14–16 whole graham cracker sheets

Optional Garnishes

  • Whole fresh strawberries
  • Crushed graham crackers
  • White chocolate shavings
  • Fresh mint leaves

Instructions

Step 1: Prepare the Cream Filling

In a large mixing bowl, beat the softened cream cheese until smooth and creamy. Add the powdered sugar and vanilla extract, mixing until fully combined.

In a separate chilled bowl, whip the cold heavy cream until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture until light, fluffy, and smooth. Be careful not to overmix, as this helps maintain the airy texture.

Step 2: Prepare the Pan

Lightly grease or line a 9×13-inch baking dish with parchment paper for easier serving.

Spread a thin layer of the cream mixture over the bottom of the pan. This helps hold the first layer of graham crackers in place.

Step 3: Build the First Layer

Arrange a single layer of graham crackers over the cream, breaking pieces as needed to fit the pan.

Spread about one-third of the cream mixture evenly over the graham crackers.

Top with an even layer of sliced strawberries, covering as much of the surface as possible.

Step 4: Repeat the Layers

Add another layer of graham crackers, followed by more cream filling and another layer of strawberries.

Repeat one more time until all ingredients have been used, finishing with a generous layer of the cream mixture on top.

Arrange additional sliced strawberries decoratively over the top for a beautiful presentation.

Step 5: Chill

Cover the baking dish tightly with plastic wrap or a lid and refrigerate for at least 6–8 hours, preferably overnight.

During this time, the graham crackers absorb moisture from the filling and soften into tender, cake-like layers.

Step 6: Garnish and Serve

Just before serving, garnish with crushed graham crackers, white chocolate shavings, whole strawberries, or fresh mint if desired.

Slice into squares and serve chilled.

Tips for the Best Strawberry Icebox Cake

  • Use ripe, sweet strawberries for the freshest flavor.
  • Chill the heavy cream before whipping for maximum volume.
  • Allow the cake to chill overnight for the softest texture.
  • Slice the strawberries evenly for neat layers.
  • Spread each layer gently to avoid breaking the graham crackers.
  • Dry washed strawberries thoroughly to prevent excess moisture.
  • For cleaner slices, use a sharp knife wiped clean between cuts.
  • Keep the dessert refrigerated until ready to serve.

Variations

Lemon Strawberry Icebox Cake

Add fresh lemon zest and a tablespoon of lemon juice to the filling for a bright citrus flavor.

Cheesecake Icebox Cake

Increase the cream cheese to 12 ounces for a richer cheesecake-style filling.

Strawberry Banana Icebox Cake

Serving Suggestions

This Strawberry Icebox Cake pairs wonderfully with:

  • Fresh fruit salad
  • Vanilla ice cream
  • Strawberry sorbet
  • Lemonade
  • Iced tea
  • Sparkling lemonade
  • Fresh coffee
  • Hot tea
  • Chocolate-covered strawberries

Storage

Store the cake covered in the refrigerator for up to 4 days.

For the best texture, keep it chilled until serving. The graham crackers will continue to soften slightly over time, making the dessert even more cake-like.

Recipe Notes

  • Full-fat cream cheese provides the richest, creamiest filling.
  • Fresh strawberries offer the best flavor and texture, especially during peak season.
  • Chilling overnight allows the flavors to meld and creates perfectly soft, cake-like layers.
  • This dessert is ideal for summer parties, barbecues, birthdays, baby showers, Easter, Mother’s Day, and holiday gatherings.
  • Feel free to customize the toppings with additional berries, toasted coconut, chopped nuts, or a drizzle of melted chocolate for an extra-special finish.
