Instructions

Step 1: Prepare the Chickpeas

Drain, rinse, and thoroughly pat the chickpeas dry using paper towels.

Removing excess moisture helps the chickpeas become lightly crisp while cooking.

Step 2: Cook the Spiced Chickpeas

Heat the olive oil in a large skillet over medium heat.

Add the chickpeas.

Sprinkle with:

  • Smoked paprika
  • Ground cumin
  • Ground coriander
  • Garlic powder
  • Turmeric
  • Cayenne pepper (if using)
  • Salt
  • Black pepper

Cook for 10–12 minutes, stirring occasionally, until the chickpeas are lightly crisp and fragrant.

Squeeze the lemon juice over the chickpeas and stir to combine.

Remove from the heat.

Step 3: Make the Herb Garlic Yogurt

In a medium bowl, combine:

  • Greek yogurt
  • Garlic
  • Lemon juice
  • Olive oil
  • Parsley
  • Dill
  • Mint (if using)
  • Salt
  • Black pepper

Whisk until smooth.

Refrigerate while preparing the remaining ingredients.

Step 4: Prepare the Tomato Cucumber Salad

In a large bowl, combine:

  • Cherry tomatoes
  • Cucumber
  • Red onion
  • Parsley
  • Mint

Drizzle with olive oil and lemon juice.

Season with salt and black pepper.

Toss gently until evenly coated.

Step 5: Cook the Eggs

Heat olive oil or butter in a nonstick skillet over medium heat.

Crack the eggs into the skillet.

Cook until the whites are set and the yolks reach your preferred doneness, about 3–5 minutes for sunny-side up.

Alternatively, prepare the eggs poached, soft-boiled, or scrambled if preferred.

Season lightly with salt and black pepper.

Step 6: Assemble the Dish

Divide the spiced chickpeas among four serving bowls or plates.

Add one cooked egg to each serving.

Spoon a generous amount of herb garlic yogurt alongside the chickpeas.

Add the tomato cucumber salad.

Step 7: Garnish and Serve

Top with crumbled feta, sliced avocado, toasted pine nuts, fresh herbs, or red pepper flakes if desired.

Serve immediately with warm pita bread and lemon wedges.

Tips for the Best Spiced Chickpeas and Eggs

  • Dry the chickpeas thoroughly before cooking to help them crisp up.
  • Cook the chickpeas over medium heat to develop deep, toasted flavor without burning the spices.
  • Use full-fat Greek yogurt for the creamiest herb sauce.
  • Fresh herbs provide the brightest flavor and aroma.
  • Taste and adjust the lemon juice and seasoning before serving.
  • Cook the eggs just until the yolks are still slightly runny for a rich sauce when mixed with the chickpeas.
  • Assemble the dish just before serving for the freshest texture.

Recipe Variations

Spicy Harissa Chickpeas

Add 1 tablespoon of harissa paste while cooking the chickpeas for a smoky, spicy kick.

Mediterranean Grain Bowl

Serve the chickpeas and eggs over cooked quinoa, farro, or brown rice for a heartier meal.

Roasted Vegetable Version

Add roasted zucchini, eggplant, bell peppers, or cauliflower to the bowl.

Vegan Chickpea Bowl

Replace the eggs with grilled tofu and use dairy-free yogurt for a completely vegan meal.

Avocado Chickpea Bowl

Top with sliced avocado and pumpkin seeds for extra healthy fats and crunch.

Feta Herb Bowl

Mix crumbled feta into the salad and garnish with extra dill and parsley.

Breakfast Wrap

Wrap the chickpeas, eggs, yogurt, and salad inside a warm whole-wheat tortilla or pita for a portable breakfast.

Storage

Store the spiced chickpeas, herb garlic yogurt, and tomato cucumber salad in separate airtight containers in the refrigerator for up to 3–4 days.

Cooked eggs are best enjoyed fresh but can be refrigerated for up to 2 days if hard-boiled. Reheat the chickpeas gently in a skillet or microwave before serving.

Freezing is not recommended for the assembled dish, as the yogurt sauce and fresh salad may lose their texture after thawing. However, the cooked chickpeas can be frozen separately for up to 2 months and reheated when needed.
