Instructions

1. Season the Shrimp

  • In a bowl, toss the shrimp with olive oil, chili powder, smoked paprika, garlic powder, salt, and black pepper.

2. Cook the Shrimp

  • Heat a large skillet over medium-high heat.
  • Add the shrimp and cook for 2–3 minutes per side until pink and opaque.
  • Transfer to a plate and set aside.

3. Prepare the Street Corn

  • In the same skillet, melt the butter.
  • Add the corn and cook for 4–5 minutes, stirring occasionally, until lightly charred.
  • Stir in the garlic and cook for 30 seconds.

4. Make the Sauce

  • Reduce heat to low.
  • Stir in the mayonnaise, sour cream, lime juice, chili powder, and cayenne pepper.
  • Mix until the corn is evenly coated.

5. Combine

  • Return the shrimp to the skillet.
  • Add the cotija cheese and cilantro.
  • Toss gently until everything is combined and heated through.

6. Serve

  • Garnish with extra cotija cheese, cilantro, and lime wedges.
  • Serve immediately.
