Ingredients

  • 2 lbs (900g) boneless, skinless chicken thighs or chicken breasts, cut into bite-sized pieces

  • 1 green bell pepper, chopped

For the BBQ Sauce

  • 1 cup barbecue sauce
  • 2 tbsp soy sauce
  • 2 tbsp pineapple juice
  • 1 tbsp brown sugar

  • 1 tsp smoked paprika
  • ½ tsp black pepper
  • ½ tsp salt

For Garnish

  • 2 green onions, sliced
  • Fresh cilantro (optional)
  • Sesame seeds (optional)

Instructions

Step 1: Prepare the Oven

Preheat your oven to 425°F (220°C). Line a large sheet pan with parchment paper or lightly grease it.

Step 2: Make the BBQ Marinade

In a large bowl, whisk together:

  • Soy sauce
  • Pineapple juice
  • Brown sugar

  • Salt and pepper

Step 3: Coat the Chicken

Bake for 25–30 minutes, stirring halfway through, until the chicken reaches an internal temperature of 165°F (74°C) and the vegetables are tender.

Step 6: Broil for Extra Flavor

Switch the oven to broil and cook for an additional 2–3 minutes to caramelize the pineapple and create slightly crispy edges on the chicken.

Step 7: Garnish and Serve

Remove from the oven and sprinkle with green onions, cilantro, or sesame seeds. Serve immediately over rice, quinoa, or cauliflower rice.
