Ingredients
For the Muffins
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- ½ teaspoon baking soda
- ½ teaspoon salt
- 1 teaspoon ground cinnamon
- ½ cup granulated sugar
- ¼ cup light brown sugar, packed
- 2 large eggs, room temperature
- ½ cup unsalted butter, melted and slightly cooled
- ½ cup sour cream
- 1 teaspoon pure vanilla extract
- 2 cups fresh rhubarb, diced into ½-inch pieces
Optional Streusel Topping
- ¼ cup all-purpose flour
- 2 tablespoons light brown sugar
- 2 tablespoons granulated sugar
- ½ teaspoon ground cinnamon
- 2 tablespoons cold unsalted butter, cubed
Instructions
Step 1: Preheat the Oven
Preheat your oven to 375°F (190°C).
Line a 12-cup muffin pan with paper liners or lightly grease each cup with nonstick cooking spray.
Step 2: Make the Streusel (Optional)
In a small bowl, combine the flour, brown sugar, granulated sugar, and cinnamon.
Cut in the cold butter using a fork or pastry cutter until the mixture resembles coarse crumbs. Refrigerate while preparing the muffin batter.
Step 3: Mix the Dry Ingredients
In a large mixing bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, granulated sugar, and brown sugar until evenly combined.
Step 4: Mix the Wet Ingredients
In a separate bowl, whisk together the eggs, melted butter, sour cream, and vanilla extract until smooth.
Step 5: Combine the Batter
Pour the wet ingredients into the dry ingredients and stir gently until just combined.
Fold in the diced rhubarb using a spatula. Avoid overmixing, as this can make the muffins dense.
Step 6: Fill the Muffin Cups
Divide the batter evenly among the prepared muffin cups, filling each about ¾ full.
Sprinkle the streusel topping evenly over each muffin, if using.
Step 7: Bake
Bake for 22–25 minutes, or until the tops are golden and a toothpick inserted into the center comes out clean or with a few moist crumbs.
Step 8: Cool
Allow the muffins to cool in the pan for 5 minutes, then transfer them to a wire rack to cool completely.
Serve warm or at room temperature.
Tips for the Best Rhubarb Muffins
- Use fresh, firm rhubarb for the best flavor and texture.
- Cut the rhubarb into evenly sized pieces so it bakes uniformly.
- Don’t overmix the batter—stir just until the flour disappears.
- Room-temperature eggs and sour cream help create a smooth batter.
- The streusel topping adds a delicious bakery-style crunch.
- If your rhubarb is especially tart, sprinkle it with a tablespoon of sugar before folding it into the batter.
- Let the muffins cool slightly before serving to allow the crumb to set.
- Store leftovers in an airtight container to keep them moist.
