Ingredients

For the Rhubarb Filling

  • 6 cups fresh rhubarb, chopped into ½-inch pieces
  • 1 cup granulated sugar
  • ¼ cup light brown sugar
  • 3 tablespoons cornstarch
  • 1 teaspoon pure vanilla extract
  • 1 tablespoon fresh lemon juice
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon salt

For the Crisp Topping

  • 1 cup old-fashioned rolled oats
  • 1 cup all-purpose flour
  • ¾ cup light brown sugar, packed
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon salt
  • ½ cup unsalted butter, cold and cubed

Optional for Serving

  • Vanilla ice cream
  • Fresh whipped cream
  • Caramel sauce
  • Chopped toasted pecans
  • Fresh mint leaves

Instructions

Step 1: Preheat the Oven

Preheat your oven to 375°F (190°C).

Lightly grease a 9×9-inch or 2-quart baking dish with butter or nonstick cooking spray.

Step 2: Prepare the Filling

In a large mixing bowl, combine the chopped rhubarb, granulated sugar, brown sugar, cornstarch, vanilla extract, lemon juice, cinnamon, and salt.

Stir until the rhubarb is evenly coated.

Transfer the mixture to the prepared baking dish and spread it into an even layer.

Step 3: Make the Crisp Topping

In a separate bowl, mix together the rolled oats, flour, brown sugar, cinnamon, and salt.

Add the cold cubed butter and use a pastry cutter, two forks, or your fingertips to work the butter into the dry ingredients until the mixture resembles coarse crumbs.

Step 4: Assemble

Evenly sprinkle the crisp topping over the rhubarb filling, covering it completely without pressing it down.

Step 5: Bake

Bake for 40–45 minutes, or until the topping is golden brown and the rhubarb filling is bubbling around the edges.

If the topping begins to brown too quickly, loosely cover the dish with aluminum foil during the final 10 minutes of baking.

Step 6: Cool

Allow the crisp to cool for 10–15 minutes before serving. This helps the filling thicken and makes serving easier.

Serve warm with vanilla ice cream or whipped cream if desired.

Tips for the Best Rhubarb Crisp

  • Use fresh, firm rhubarb for the best texture and flavor.
  • Cut the rhubarb into evenly sized pieces so it cooks uniformly.
  • Keep the butter cold when making the topping for a crisp, crumbly texture.
  • Don’t skip the cornstarch—it helps thicken the juicy filling.
  • Let the crisp cool slightly before serving so the filling can set.
  • Add a pinch of nutmeg or ginger for extra warmth.
  • For more crunch, stir chopped pecans or walnuts into the topping.
  • Bake until the fruit is bubbling to ensure the filling is fully cooked.
