Ingredients

For the Bread

  • 1½ cups oat flour
  • 1 cup vanilla protein powder
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon salt
  • 2 large eggs
  • 1 cup plain Greek yogurt
  • ¼ cup milk (dairy or unsweetened almond milk)
  • ¼ cup pure maple syrup or honey
  • 2 tablespoons melted coconut oil or unsalted butter
  • 1 teaspoon vanilla extract

Optional Mix-Ins

  • ½ cup fresh blueberries
  • ½ cup mini chocolate chips
  • ¼ cup chopped walnuts or pecans
  • 2 tablespoons ground flaxseed
  • 1 tablespoon chia seeds
  • Sliced bananas
  • Unsweetened shredded coconut

Optional Toppings

  • Maple syrup
  • Butter
  • Almond butter
  • Peanut butter
  • Fresh berries
  • Greek yogurt
  • Powdered sugar
  • Chopped nuts

Instructions

Step 1: Prepare the Oven

Preheat your oven to 350°F (175°C).

Grease a 9×5-inch loaf pan or line it with parchment paper for easy removal.

Step 2: Mix the Dry Ingredients

In a large mixing bowl, whisk together the oat flour, protein powder, baking powder, baking soda, cinnamon, and salt until evenly combined.

Step 3: Mix the Wet Ingredients

In a separate bowl, whisk together the eggs, Greek yogurt, milk, maple syrup, melted coconut oil, and vanilla extract until smooth and creamy.

Step 4: Make the Batter

Pour the wet ingredients into the bowl with the dry ingredients.

Stir gently until just combined.

If the batter seems too thick, add 1–2 tablespoons of milk until it reaches a thick but spreadable consistency.

Fold in any optional mix-ins, such as blueberries, chocolate chips, or chopped nuts.

Step 5: Bake

Transfer the batter to the prepared loaf pan and spread it evenly.

Bake for 40–45 minutes, or until the top is golden and a toothpick inserted into the center comes out clean or with a few moist crumbs.

If the top begins to brown too quickly, loosely cover it with aluminum foil during the last 10 minutes of baking.

Step 6: Cool

Allow the bread to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.

Slice with a serrated knife for neat, even slices.

Step 7: Serve

Serve warm or at room temperature with butter, maple syrup, Greek yogurt, nut butter, or fresh fruit.

It’s delicious for breakfast, a post-workout snack, or a healthy afternoon treat.

Tips for the Best Protein Pancake Bread

  • Use a protein powder you enjoy, as it greatly influences the flavor.
  • Measure the oat flour accurately to keep the bread light and tender.
  • Don’t overmix the batter, which can make the loaf dense.
  • Greek yogurt helps keep the bread moist while adding extra protein.
  • Let the loaf cool before slicing for the best texture.
  • Store individual slices for an easy grab-and-go breakfast.
