Ingredients

For the Bars

  • 24 Oreo cookies, crushed
  • 4 tbsp unsalted butter, melted
  • 4 cups vanilla ice cream, slightly softened

For the Chocolate Coating

  • 1½ cups semi-sweet chocolate chips
  • 2 tbsp coconut oil or vegetable oil

Instructions

1. Prepare the Crust

  1. Line an 8×8-inch (20×20 cm) baking pan with parchment paper.
  2. Mix the crushed Oreo cookies with melted butter until evenly combined.
  3. Press about two-thirds of the mixture firmly into the bottom of the pan.
  4. Freeze for 10 minutes to set.

2. Add the Ice Cream Layer

  1. Spread the softened vanilla ice cream evenly over the chilled crust.
  2. Sprinkle the remaining Oreo crumbs on top and gently press them into the ice cream.
  3. Cover and freeze for at least 4 hours or until completely firm.

3. Cut the Bars

  1. Lift the frozen dessert from the pan using the parchment paper.
  2. Cut into 8–10 bars.
  3. Place the bars on a parchment-lined tray and freeze again for 15–20 minutes.

4. Make the Chocolate Coating

  1. Melt the chocolate chips and coconut oil together in a microwave-safe bowl, stirring every 20 seconds until smooth.
  2. Allow the chocolate to cool slightly.

5. Coat the Bars

  1. Dip each frozen bar into the melted chocolate or drizzle the chocolate over the bars.
  2. Immediately add any desired toppings before the coating sets.
  3. Return the bars to the freezer for 10–15 minutes until the chocolate hardens.
