Ingredients
For the Bars
- 24 Oreo cookies, crushed
- 4 tbsp unsalted butter, melted
- 4 cups vanilla ice cream, slightly softened
For the Chocolate Coating
- 1½ cups semi-sweet chocolate chips
- 2 tbsp coconut oil or vegetable oil
Optional Toppings
- Crushed Oreo cookies
- Mini chocolate chips
- Sprinkles
- White chocolate drizzle
Instructions
1. Prepare the Crust
- Line an 8×8-inch (20×20 cm) baking pan with parchment paper.
- Mix the crushed Oreo cookies with melted butter until evenly combined.
- Press about two-thirds of the mixture firmly into the bottom of the pan.
- Freeze for 10 minutes to set.
2. Add the Ice Cream Layer
- Spread the softened vanilla ice cream evenly over the chilled crust.
- Sprinkle the remaining Oreo crumbs on top and gently press them into the ice cream.
- Cover and freeze for at least 4 hours or until completely firm.
3. Cut the Bars
- Lift the frozen dessert from the pan using the parchment paper.
- Cut into 8–10 bars.
- Place the bars on a parchment-lined tray and freeze again for 15–20 minutes.
4. Make the Chocolate Coating
- Melt the chocolate chips and coconut oil together in a microwave-safe bowl, stirring every 20 seconds until smooth.
- Allow the chocolate to cool slightly.
5. Coat the Bars
- Dip each frozen bar into the melted chocolate or drizzle the chocolate over the bars.
- Immediately add any desired toppings before the coating sets.
- Return the bars to the freezer for 10–15 minutes until the chocolate hardens.
Tips
- Keep the bars very cold before dipping to help the chocolate set quickly.
- Use double-stuffed Oreos for an even creamier cookies-and-cream flavor.
- Try chocolate, cookies-and-cream, or mint ice cream for variations.
- For cleaner cuts, warm your knife under hot water and wipe dry between slices.
- Store bars in an airtight container in the freezer for up to 2 weeks.
- Add chopped peanuts, toffee bits, or crushed candy bars for extra texture.
Serving Suggestions
- Serve straight from the freezer for the best texture.
- Pair with a glass of cold milk or iced coffee.
- Drizzle with caramel or hot fudge sauce for an extra-indulgent dessert.
