Ingredients (Serves 4)

For the chicken

  • 4 boneless, skinless chicken thighs (or 2 large chicken breasts)
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tsp paprika
  • 1 tsp dried oregano
  • 2 tbsp olive oil

For the orzo

  • 1 cup orzo pasta
  • 3 garlic cloves, minced
  • 1 small onion, finely chopped
  • 2 cups chicken broth
  • Juice of 1 lemon
  • Zest of 1 lemon
  • ½ cup heavy cream (optional for creamier texture)
  • ¼ cup grated Parmesan cheese
  • 2 cups baby spinach
  • 2 tbsp chopped parsley or basil
  • Lemon slices, for garnish

Instructions

1. Season and sear the chicken

Pat the chicken dry. Season with salt, pepper, paprika, and oregano.

Heat olive oil in a large deep skillet over medium-high heat. Add chicken and cook:

  • Thighs: 5–6 minutes per side
  • Breasts: 4–5 minutes per side

Cook until golden brown. Remove and set aside.


2. Sauté aromatics

In the same pan, add onion and cook 2–3 minutes until soft. Stir in garlic and cook for 30 seconds.

Add the orzo and toast for 1–2 minutes, stirring often. This gives the pasta a nutty flavor.


3. Simmer

Pour in chicken broth, lemon juice, and lemon zest. Stir well.

Return chicken to the pan. Lower heat to medium-low, cover, and simmer for about 10–12 minutes, stirring once or twice so the orzo doesn’t stick.


4. Finish the dish

When the orzo is tender:

  • Stir in cream (if using)
  • Add Parmesan cheese
  • Fold in spinach until wilted

Taste and adjust seasoning.


5. Serve

Top with fresh herbs and lemon slices. Serve warm straight from the pan.


Tips

For extra flavor

  • Marinate the chicken in lemon juice, garlic, and olive oil for 30 minutes beforehand.
  • Add a pinch of chili flakes for gentle heat.

For the best texture

  • Stir the orzo occasionally while simmering so it cooks evenly.
  • If the mixture thickens too much, add a splash of broth.

Easy variations

  • Swap spinach for kale or peas.
  • Use shrimp instead of chicken (cook shrimp separately and add at the end).
  • Add sun-dried tomatoes or olives for a Mediterranean twist.

Storage

  • Refrigerate leftovers in an airtight container for up to 3 days.
  • Reheat with a splash of broth or water to loosen the sauce.
