Ingredients

For the Cake

  • 1¾ cups all-purpose flour
  • 2 teaspoons baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 1 cup granulated sugar
  • 3 large eggs, room temperature
  • ¾ cup extra virgin olive oil
  • ½ cup whole milk
  • ¼ cup fresh lemon juice
  • 2 tablespoons lemon zest (from about 2 lemons)
  • 1 teaspoon pure vanilla extract

Optional Lemon Glaze

  • 1 cup powdered sugar
  • 2–3 tablespoons fresh lemon juice
  • 1 teaspoon lemon zest

Optional Garnishes

  • Thin lemon slices
  • Fresh berries
  • Powdered sugar
  • Fresh mint leaves

Instructions

Step 1: Prepare the Oven

Preheat the oven to 350°F (175°C).

Grease and line an 8-inch or 9-inch round cake pan with parchment paper.

Step 2: Mix the Dry Ingredients

In a medium bowl, whisk together the flour, baking powder, baking soda, and salt.

Set aside.

Step 3: Mix the Wet Ingredients

In a large mixing bowl, whisk together the granulated sugar and eggs until the mixture becomes light and slightly thickened.

Slowly whisk in the olive oil until fully incorporated.

Add the milk, lemon juice, lemon zest, and vanilla extract, mixing until smooth.

Step 4: Combine the Batter

Gradually add the dry ingredients to the wet ingredients.

Fold gently with a spatula until no dry streaks remain. Avoid overmixing to keep the cake tender.

Step 5: Bake

Pour the batter into the prepared cake pan and smooth the top.

Bake for 40–45 minutes, or until the top is lightly golden and a toothpick inserted into the center comes out clean or with a few moist crumbs.

Step 6: Cool

Allow the cake to cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.

Step 7: Prepare the Lemon Glaze (Optional)

In a small bowl, whisk together the powdered sugar, lemon juice, and lemon zest until smooth.

If needed, add a little more lemon juice for a thinner glaze or more powdered sugar for a thicker consistency.

Drizzle the glaze over the cooled cake.

Step 8: Garnish and Serve

Decorate with lemon slices, fresh berries, a dusting of powdered sugar, or fresh mint leaves if desired.

Slice and serve.
