Ingredients
For the Crust
- 1 cup crushed graham crackers or digestive biscuits
- 1/4 cup melted butter
- 2 tablespoons sugar
For the Cream Cheese Layer
- 1 package (225 g) cream cheese, softened
- 1 cup powdered sugar
- 1 cup whipped cream or whipped topping
For the Lemon Layer
- 2 cups cold milk
- 1 package instant lemon pudding mix
- 2 tablespoons fresh lemon juice
- 1 teaspoon lemon zest
Topping
- Extra whipped cream
- Lemon slices or zest for garnish
Instructions
1. Prepare the Crust
- Mix crushed crackers, melted butter, and sugar.
- Press firmly into the bottom of a dish or pan.
- Chill for 15 minutes.
2. Make the Cream Layer
- Beat cream cheese until smooth.
- Add powdered sugar and mix well.
- Fold in whipped cream gently.
- Spread over the chilled crust.
3. Prepare the Lemon Layer
- Whisk pudding mix with cold milk until thick.
- Add lemon juice and lemon zest.
- Spread carefully over the cream cheese layer.
4. Add Topping
- Spread whipped cream on top.
- Garnish with lemon zest or slices.
5. Chill
- Refrigerate for at least 3–4 hours before serving for best texture.
Tips
- Use fresh lemon juice for a brighter flavor.
- Chill the dessert overnight for cleaner slices.
- Add crushed nuts or coconut to the crust for extra texture.
- For a lighter version, use low-fat cream cheese and whipped topping.
- Keep it refrigerated until serving.
