- ⅓ cup granulated sugar
- 2 teaspoons baking powder

- ½ cup whole milk
- 1 teaspoon vanilla extract
- 1 teaspoon lemon zest
For Finishing
- 1 tablespoon coarse sugar (optional)
- Vanilla ice cream or whipped cream, for serving
- Fresh mint leaves, for garnish (optional)
Equipment

- Large mixing bowls
- Whisk
- Pastry cutter or fork
- Rubber spatula
- Measuring cups and spoons
- Zester or fine grater
Instructions
Step 1: Preheat the Oven
Preheat your oven to 375°F (190°C).
Lightly grease a 9-inch baking dish with butter or nonstick cooking spray.
Step 2: Prepare the Berry Filling
In a large bowl, combine the mixed berries, granulated sugar, brown sugar, cornstarch, lemon zest, lemon juice, vanilla extract, and salt.
Gently toss until the berries are evenly coated.
Allow the mixture to sit for 10 minutes so the berries release some of their natural juices.
Pour the berry mixture into the prepared baking dish and spread it into an even layer.
Step 3: Make the Cobbler Topping
In another large bowl, whisk together the flour, sugar, baking powder, salt, and cinnamon.
Add the cold butter cubes.
Using a pastry cutter, two forks, or your fingertips, work the butter into the flour until the mixture resembles coarse crumbs.
Stir together the milk, vanilla extract, and lemon zest.
Pour the wet ingredients into the flour mixture and gently stir just until combined.
Do not overmix. The batter should be thick and slightly lumpy.
Step 4: Assemble the Cobbler
Drop spoonfuls of the topping evenly over the berry filling.
Leave small gaps between the spoonfuls so the fruit can bubble through during baking.
Sprinkle the top with coarse sugar for extra crunch and a beautifully golden finish.
Step 5: Bake
Place the baking dish on the center oven rack.
Bake for 45–50 minutes, or until the berry filling is bubbling around the edges and the topping is golden brown.
If the topping browns too quickly, loosely tent the dish with aluminum foil during the final 10–15 minutes of baking.
Step 6: Cool Slightly
Remove the cobbler from the oven and let it rest for 15–20 minutes.
This allows the fruit filling to thicken slightly, making it easier to serve.
Step 7: Serve
Spoon the warm cobbler into serving bowls.
Top with a scoop of vanilla ice cream or a generous dollop of whipped cream.
Garnish with fresh berries, lemon zest, or mint leaves for an elegant presentation.

- Avoid overmixing the topping to keep it light and tender.
- Cold butter helps create a flaky, biscuit-like topping.
- Let the cobbler cool before serving so the filling thickens properly.
- Place the baking dish on a rimmed baking sheet to catch any bubbling juices.
