Ingredients

For the Cheese Sauce
- 2 tablespoons unsalted butter
- 2 cloves garlic, minced
- 4 oz (115 g) full-fat cream cheese, softened
- 1½ cups (360 ml) heavy whipping cream
- 2 teaspoons Dijon mustard
- 1 teaspoon onion powder
- ½ teaspoon garlic powder
- ½ teaspoon smoked paprika
- ½ teaspoon sea salt
- ¼ teaspoon freshly ground black pepper
- 2 cups (225 g) sharp cheddar cheese, shredded
- 1 cup (110 g) mozzarella cheese, shredded
- ½ cup (50 g) Parmesan cheese, grated

- ½ cup crushed pork rinds
- ¼ cup grated Parmesan cheese
- 1 tablespoon melted butter
- 1 teaspoon chopped fresh parsley

Instructions
Step 1: Cook the Cauliflower
- Bring a large pot of salted water to a boil.
- Add the cauliflower florets and cook for 5–6 minutes, until just fork-tender.
- Drain well and pat dry with paper towels to remove excess moisture.
If using hearts of palm pasta: Cook according to the package directions, then drain thoroughly.
Step 2: Make the Cheese Sauce
- Melt the butter in a large skillet over medium heat.
- Add the minced garlic and cook for 30–60 seconds until fragrant.
- Stir in the cream cheese until smooth.
- Slowly whisk in the heavy cream.
- Add the Dijon mustard, onion powder, garlic powder, smoked paprika, salt, and black pepper.
- Simmer gently for 3–4 minutes, stirring frequently.
Step 3: Add the Cheese
- Reduce the heat to low.
- Gradually stir in the cheddar, mozzarella, and Parmesan cheeses.
- Continue stirring until the sauce is smooth, creamy, and fully melted.
Step 4: Combine
- Add the cooked cauliflower (or keto pasta) to the cheese sauce.
- Fold gently until every piece is coated.
Step 5: Bake (Optional)
For a baked version:
- Preheat the oven to 375°F (190°C).
- Transfer the mac and cheese to a greased baking dish.
- Mix the crushed pork rinds, Parmesan, and melted butter.
- Sprinkle evenly over the top.
- Bake for 15–20 minutes, or until golden and bubbling.
Step 6: Serve
Garnish with chopped parsley and extra Parmesan cheese. Serve hot for the creamiest texture.
