Ingredients

For the Cauliflower Base

For the Creamy Cheese Sauce

  • 3 tablespoons unsalted butter
  • 3 cloves garlic, minced
  • 4 ounces cream cheese, softened
  • 1 cup heavy cream
  • ½ cup sour cream
  • 2 cups shredded sharp cheddar cheese
  • 1 cup shredded mozzarella cheese
  • ½ cup grated Parmesan cheese
  • 1 teaspoon Dijon mustard
  • 1 teaspoon smoked paprika
  • ½ teaspoon onion powder
  • ½ teaspoon garlic powder
  • ½ teaspoon dried mustard powder (optional)
  • Salt and black pepper, to taste

For the Topping

  • ½ cup shredded cheddar cheese
  • ¼ cup grated Parmesan cheese
  • 2 tablespoons crushed pork rinds (optional for keto crunch)
  • 1 tablespoon melted butter
  • 1 tablespoon chopped fresh parsley

Equipment Needed

  • Large pot
  • Large skillet or saucepan
  • Baking dish (9×13-inch)
  • Colander
  • Whisk
  • Mixing bowl

Instructions

Step 1: Prepare the Cauliflower

Preheat the oven to 375°F (190°C).

Wash and cut the cauliflower into bite-sized florets.

Bring a large pot of salted water to a boil.

Add the cauliflower and cook for 5–6 minutes until slightly tender but still firm.

Drain thoroughly.

For the best texture, allow the cauliflower to sit in the colander for several minutes to release excess moisture. You can also gently pat it dry with paper towels.

Place the cauliflower in a large bowl.

Toss with:

  • Olive oil
  • Salt
  • Black pepper
  • Garlic powder

Set aside.


Step 2: Make the Cheese Sauce

Heat a large saucepan over medium heat.

Melt the butter.

Add the minced garlic and cook for 30–60 seconds until fragrant.

Reduce heat to low.

Add the softened cream cheese and stir until melted and smooth.

Slowly pour in the heavy cream while whisking continuously.

Add:

  • Sour cream
  • Dijon mustard
  • Smoked paprika
  • Onion powder
  • Garlic powder
  • Salt
  • Black pepper

Cook for 3–5 minutes until the sauce begins to thicken.

Gradually add:

  • Cheddar cheese
  • Mozzarella cheese
  • Parmesan cheese

Stir until all the cheese melts into a smooth, creamy sauce.


Step 3: Combine the Cauliflower and Cheese Sauce

Add the cooked cauliflower florets to the cheese sauce.

Gently stir until every piece is evenly coated.

Taste and adjust seasoning if needed.


Step 4: Assemble the Casserole

Grease a baking dish with butter or cooking spray.

Pour the cheesy cauliflower mixture into the dish.

Spread evenly.

In a small bowl, combine:

  • Cheddar cheese
  • Parmesan cheese
  • Crushed pork rinds (if using)
  • Melted butter

Sprinkle the topping evenly over the cauliflower.


Step 5: Bake

Place the dish in the oven.

Bake for 20–25 minutes until the cheese is melted, bubbling, and golden on top.

For an extra crispy topping, broil for 1–2 minutes, watching carefully.

Remove from the oven and allow it to rest for 5 minutes before serving.
