Instructions
Step 1: Marinate the Chicken
Place the chicken pieces in a large bowl.
Add:
- Buttermilk or keto buttermilk substitute
- Eggs
- Hot sauce
- Salt
- Black pepper
Mix well until all pieces are coated.
Cover and refrigerate for at least 2 hours. For the best flavor and tenderness, marinate overnight.
Step 2: Prepare the Keto Coating
In a large shallow bowl, combine:
- Almond flour
- Parmesan cheese
- Coconut flour
- Baking powder
- Paprika
- Garlic powder
- Onion powder
- Oregano
- Thyme
- Italian seasoning
- Salt
- Black pepper
- Cayenne pepper
- Smoked paprika
Mix thoroughly until the seasonings are evenly distributed.
Step 3: Coat the Chicken
Remove chicken pieces from the marinade, allowing excess liquid to drip off.
Press each piece firmly into the keto coating, making sure all sides are covered.
For an extra crispy crust:
- Dip the coated chicken back into the marinade briefly.
- Coat it again with the almond flour mixture.
Place coated chicken pieces on a wire rack and let them rest for 10 minutes. This helps the coating stick during cooking.
Cooking Methods
Option 1: Deep Frying (Crispiest)
Heat oil to 350°F (175°C).
Carefully add chicken pieces in batches, avoiding overcrowding.
Fry:
- Wings: 8–10 minutes
- Drumsticks: 12–15 minutes
- Thighs: 15–18 minutes
Cook until golden brown and the internal temperature reaches 165°F (74°C).
Transfer to a wire rack to drain.
Option 2: Air Fryer Method
Preheat air fryer to 375°F (190°C).
Lightly spray the chicken with oil.
Arrange pieces in a single layer without overcrowding.
Air fry for:
- Wings: 20–25 minutes
- Drumsticks/thighs: 25–35 minutes
Flip halfway through cooking and spray again if needed.
Option 3: Oven-Baked Method
Preheat oven to 425°F (220°C).
Place chicken on a greased wire rack over a baking sheet.
Brush lightly with melted butter or olive oil.
Bake for:
- 35–45 minutes
until crispy and fully cooked.
Step 4: Rest and Serve
Allow the fried chicken to rest for 5 minutes before serving.
Serve hot with your favorite keto-friendly sides and dipping sauces.

Tips for Success
- Marinating the chicken is the secret to juicy, flavorful meat.
- Use finely grated Parmesan for a smoother, crispier coating.
- Let excess marinade drip off before coating to prevent a soggy crust.
- Do not overcrowd the fryer or air fryer; proper airflow creates crispiness.
- A wire rack keeps the coating crispy by allowing air circulation.
- Add crushed pork rinds to the coating for an extra crunchy keto-style crust.
- Season every layer—the marinade and coating—to create the best flavor.
