For the Mug Cake

  • 3 tablespoons (30 g) fine almond flour
  • 1 tablespoon (10 g) unsweetened cocoa powder
  • 1½ tablespoons powdered erythritol or monk fruit sweetener
  • ¼ teaspoon baking powder
  • Pinch of salt
  • 1 large egg
  • 1 tablespoon (15 g) unsalted butter, melted
  • 1 tablespoon (15 ml) unsweetened almond milk
  • ½ teaspoon vanilla extract

Optional Add-Ins

  • 1 tablespoon sugar-free chocolate chips
  • 1 tablespoon chopped walnuts or pecans
  • ½ teaspoon instant espresso powder
  • Pinch of cinnamon
  • 1 teaspoon peanut butter for a gooey center

Optional Toppings

  • Sugar-free whipped cream
  • Fresh berries
  • Sugar-free chocolate sauce
  • Chopped nuts
  • Low-carb ice cream

Equipment

  • Microwave-safe mug (10–12 oz)
  • Small spoon or whisk
  • Measuring spoons

Instructions

Step 1: Prepare the Mug

  1. Lightly grease a microwave-safe mug with butter or cooking spray.
  2. This helps the cake release easily after cooking.

Step 2: Mix the Dry Ingredients

Add directly into the mug:

  • Almond flour
  • Cocoa powder
  • Sweetener
  • Baking powder
  • Salt

Stir well to remove any lumps.

Step 3: Add Wet Ingredients

Add:

  • Egg
  • Melted butter
  • Almond milk
  • Vanilla extract

Mix until the batter is smooth and fully combined.

Step 4: Add Extras

Fold in sugar-free chocolate chips, nuts, espresso powder, or peanut butter if desired.

Step 5: Cook the Cake

Microwave Method:

  1. Microwave for 60–90 seconds.
  2. Check the center; it should be set but still slightly moist.
  3. Avoid overcooking, as the cake can become dry.

Oven Method:

  1. Preheat oven to 350°F (175°C).
  2. Bake in an oven-safe ramekin for 12–15 minutes.

Step 6: Serve

Allow the mug cake to cool for 1–2 minutes. Top with whipped cream, berries, chocolate drizzle, or nuts and enjoy warm.
