Ingredients

  • ¾ cup (75 g) grated Parmesan cheese

  • ½ teaspoon smoked paprika
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

Egg Wash

  • 2 large eggs
  • 1 tablespoon heavy cream

For Cooking

  • 3 tablespoons olive oil
  • 1 tablespoon unsalted butter

Toppings

  • 1 cup (240 ml) sugar-free marinara sauce
  • 2 cups (225 g) shredded mozzarella cheese
  • ¼ cup (25 g) grated Parmesan cheese
  • Fresh basil leaves, chopped
  • Fresh parsley, chopped (optional)

Instructions

Step 1: Prepare the Chicken

  1. Preheat the oven to 400°F (200°C).
  2. Slice each chicken breast in half horizontally or pound to an even ½-inch (1.25 cm) thickness.
  3. Season both sides with salt, pepper, garlic powder, onion powder, and Italian seasoning.

Step 2: Prepare the Coating

In a shallow bowl, mix together:

  • Almond flour
  • Parmesan cheese
  • Garlic powder
  • Italian seasoning
  • Smoked paprika
  • Salt
  • Black pepper

In another bowl, whisk together the eggs and heavy cream.


Step 3: Bread the Chicken

  1. Dip each chicken piece into the egg mixture.
  2. Coat thoroughly with the almond flour mixture, pressing gently so the coating adheres well.

Step 4: Pan-Fry

  1. Heat the olive oil and butter in a large skillet over medium heat.
  2. Cook the chicken for 3–4 minutes per side, until the coating is golden brown.
  3. Transfer the chicken to a baking dish.

Step 5: Add the Toppings

  1. Spoon sugar-free marinara sauce evenly over each chicken breast.
  2. Top with shredded mozzarella.
  3. Sprinkle grated Parmesan over the mozzarella.

Step 6: Bake

Bake for 15–18 minutes, or until the chicken reaches an internal temperature of 165°F (74°C) and the cheese is melted and bubbling.

For a golden finish, broil for 2–3 minutes at the end of cooking.


Step 7: Garnish and Serve

Remove from the oven and let the chicken rest for 5 minutes. Garnish with fresh basil and parsley before serving.

Add ½ teaspoon crushed red pepper flakes to the coating or marinara sauce.
