Instructions
Step 1: Prepare the Beans
If using dried kidney beans, rinse them thoroughly and soak them overnight in plenty of water.
Drain the soaked beans and place them in a large pot with fresh water. Bring to a boil, then reduce heat and simmer for 45–60 minutes until the beans are tender but not falling apart.
Reserve some of the bean cooking liquid, as it adds extra flavor and color to the rice.
If using canned beans, simply drain and rinse them before cooking.
