Ingredients

For the Salad

  • 1 pound (450g) rotini or fusilli pasta
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1 red bell pepper, diced
  • ½ cup green bell pepper, diced
  • ½ cup red onion, thinly sliced
  • 1 cup fresh mozzarella pearls
  • ¾ cup sliced black olives
  • ½ cup sliced pepperoncini
  • 6 ounces (170g) salami, diced or sliced into strips
  • ¼ cup grated Parmesan cheese
  • ¼ cup chopped fresh parsley
  • 2 tablespoons chopped fresh basil

For the Italian Dressing

  • ½ cup extra virgin olive oil
  • ¼ cup red wine vinegar
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon Dijon mustard
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • ½ teaspoon dried oregano
  • ½ teaspoon onion powder
  • ½ teaspoon salt
  • ¼ teaspoon freshly ground black pepper
  • ¼ teaspoon crushed red pepper flakes (optional)
  • 1 teaspoon honey (optional, to balance the acidity)

Equipment

Instructions

Step 1: Cook the Pasta

Bring a large pot of generously salted water to a boil.

Cook the pasta according to the package directions until al dente.

Drain the pasta and rinse it under cold water to stop the cooking process and cool it completely.

Drain well before transferring it to a large mixing bowl.


Step 2: Prepare the Vegetables

While the pasta cools, wash and chop the cherry tomatoes, cucumber, bell peppers, onion, parsley, and basil.

Slice the olives and pepperoncini if needed.

Dice the salami into bite-sized pieces.


Step 3: Make the Dressing

In a small bowl or mason jar, combine the olive oil, red wine vinegar, lemon juice, Dijon mustard, garlic, Italian seasoning, oregano, onion powder, salt, black pepper, crushed red pepper flakes, and honey.

Whisk or shake until the dressing is smooth and well combined.


Step 4: Assemble the Salad

Add the tomatoes, cucumber, bell peppers, onion, mozzarella pearls, olives, pepperoncini, salami, Parmesan cheese, parsley, and basil to the bowl with the cooled pasta.

Pour the dressing over the salad.

Toss gently until all of the ingredients are evenly coated.


Step 5: Chill

Cover the bowl and refrigerate the pasta salad for at least 30 minutes before serving.

Chilling allows the flavors to blend and makes the salad even more delicious.

If the pasta absorbs some of the dressing while chilling, toss with a small drizzle of olive oil or an extra splash of dressing before serving.


Step 6: Serve

Transfer the pasta salad to a serving bowl.

Garnish with additional Parmesan cheese, fresh basil, parsley, and a few extra pepperoncini slices if desired.

Serve chilled or at cool room temperature.
