Ingredients
- 1 (15-ounce/425g) can chickpeas, drained and rinsed
- ¼ cup tahini
- 3 tablespoons fresh lemon juice
- 2 cloves garlic
- 2 tablespoons extra virgin olive oil
- ½ teaspoon ground cumin (optional)
- ½ teaspoon fine sea salt
- 2–5 tablespoons ice-cold water
- Pinch of paprika (for garnish)
- Fresh chopped parsley (optional)
- Extra olive oil for serving
Equipment
- Food processor or high-powered blender
- Measuring cups and spoons
- Rubber spatula
- Serving bowl
Instructions
Step 1: Prepare the Chickpeas
Drain and rinse the chickpeas thoroughly. For extra creamy hummus, gently remove the loose skins by rubbing the chickpeas between your hands or in a clean kitchen towel. While optional, this step creates an exceptionally smooth texture.
Step 2: Blend the Tahini
Add the tahini and lemon juice to a food processor. Blend for about 1 minute until the mixture becomes light and creamy.
Step 3: Add Garlic and Seasoning
Add the garlic, olive oil, cumin (if using), and salt. Blend again for another 30–60 seconds until smooth.
Step 4: Add the Chickpeas
Add half of the chickpeas and process until smooth. Add the remaining chickpeas and continue blending for 2–3 minutes.
Step 5: Adjust the Texture
With the processor running, slowly add the ice-cold water, one tablespoon at a time, until the hummus reaches a silky, creamy consistency.
Step 6: Taste and Adjust
Taste the hummus and adjust with more lemon juice, salt, or garlic if desired.
Step 7: Serve
Transfer the hummus to a serving bowl. Use the back of a spoon to create swirls on the surface, drizzle with olive oil, and garnish with paprika, chopped parsley, or whole chickpeas.
