Ingredients
For the Skewers
- 1 lb (450 g) large shrimp, peeled and deveined
- 2 ripe but firm mangoes, cut into 1-inch cubes
- 1 red bell pepper, cut into chunks
- 1 red onion, cut into chunks
For the Marinade
- 2 tbsp olive oil
- 2 tbsp lime juice
- 2 cloves garlic, minced
- 1 tsp paprika
- ½ tsp chili flakes (optional)
- ½ tsp salt
- ¼ tsp black pepper
Garnish
- Fresh cilantro, chopped
- Lime wedges
Instructions
1. Marinate the Shrimp
- In a bowl, combine olive oil, lime juice, garlic, paprika, chili flakes, salt, and pepper.
- Add shrimp and toss to coat.
- Cover and refrigerate for 20–30 minutes.
2. Assemble the Skewers
- If using wooden skewers, soak them in water for 30 minutes.
- Alternate shrimp, mango, bell pepper, and onion on each skewer.
3. Grill
- Preheat grill to medium-high heat (400°F / 200°C).
- Lightly oil the grill grates.
- Grill skewers for 2–3 minutes per side.
- Cook until shrimp turn pink and opaque with light grill marks.
4. Serve
- Transfer to a serving platter.
- Sprinkle with fresh cilantro.
- Serve with lime wedges.
Tips
- Use firm mangoes so they hold their shape on the grill.
- Avoid overcooking shrimp; they cook very quickly.
- Add pineapple chunks for extra tropical flavor.
- Brush with a honey-lime glaze during the last minute of grilling for a sweet finish.
- Pair with coconut rice, grilled vegetables, or a fresh salad.
